Pomegranate & Pistachio Bark From page 26 Serves 10-12 • 8 oz. white chocolate, chopped • 1/4 c. pomegranate seeds, plus more for sprinkling • 2 tbsp. roasted pistachios, chopped, plus more for sprinkling Directions Line a rimmed baking sheet with parch ment paper. Melt chocolate in micro wave-safe bowl on high, stirring every 30 seconds, until smooth, about 1 minute. Stir in pomegranates and pistachios. Pour on prepared baking sheet and smooth with an offset spatula. Sprinkle top with pomegranates and pistachios. Freeze until firm, 25 to 30 minutes. Break into pieces. Refrigerate in an airtight con tainer up to 1 week.

• 1 cup vodka • 2 cups ginger beer • 2 cups passion fruit juice • 1/2 cup lime juice

• 3 pounds (1360g) New York strip roast • 2 tablespoons extra virgin olive oil, divided • 1 tablespoon kosher salt • 2 teaspoons freshly ground pepper • 1 teaspoon instant chicken stock • 3 lbs baby golden potatoes, rinsed and patted dry • 2 tablespoon unsalted butter • 3 garlic cloves, minced or grated • 1 sprig of thyme, chopped • 1 sprig of rosemary, chopped • 2 tablespoons chopped parsley butter potatoes: Preheat your oven to 450°F (230°C). Place the New York strip roast on a cutting board fat side up. Rub the roast with 1 tablespoon olive oil and season all sides generously with salt, pepper, and instant chicken stock like you would make a crust around the meat. Set aside. In a small bowl, combine butter, garlic, parlsey, thyme, and rosemary. Place the potatoes in a roasting pan and drizzle with 1 tablespoon of olive oil. Season with salt and pepper, then combine with the garlic herb butter mixture. Toss the potatoes in the butter mixture to coat well. Arrange the beef roast on top of the potatoes and place it in the oven for about 15 minutes at 450°F (230°C). Reduce the oven temperature to 325°F (160°C) and continue roasting for approximately 1 1/4 hours for medium doneness – 145°F (60°C) on a meat thermometer. Transfer the meat to a cutting board. Directions Mix all the ingredients together in a cocktail shaker and serve over ice. Garnish with passion fruit or lime.

• 1 1/2 cups heavy whipping cream • 8 ounce container mascarpone

cheese, room temperature • 1/3 cup granulated sugar • 1 teaspoon vanilla extract • 1 1/2 cups cold espresso

• 3 Tablespoons coffee flavored liqueur ,optional (Kahlua or Baileys) • 1 package Lady Fingers • Cocoa powder for dusting the top Directions Add whipping cream to a mixing bowl and beat on medium speed with electric mixers (or use a stand mixer). Slowly add sugar and vanil la and continue to beat until stiff peaks. Add mascarpone cheese and fold in until combined. Set aside. Add coffee and liqueur to a shallow bowl. Dip the lady fingers in the cof fee (Don't soak them--just quickly dip them on both sides to get them wet) and lay them in a single layer on the bottom of an 8x8'' or similar size pan. Smooth half of the mascarpone mixture over the top. Add another layer of dipped lady fingers. Smooth remaining mascarpone cream over the top. Dust cocoa powder generously over the top using a fine mesh strainer. Refrigerate for at least 3-4 hours or up to overnight before serving.

Green Goddess Salad From page 20 Serves 4-6 Salad: • 1 head iceberg lettuce diced • 3-4 small cucumbers finely diced • 1 bunch green onions sliced • 1 avocado sliced

Green Goddess Dressing: • juice of 2 lemons • 1/4 cup olive oil • 2 tbsp rice vinegar • 2 cloves garlic • 1 small shallot • 1 cup fresh basil • 1 cup spinach • 1/4 cup walnuts • 1/3 cup nutritional yeast • 1 tsp salt

Directions Finely chop up all of the vegetables and toss in a large bowl. Blend all ingredients for salad dressing in a blender. Mix everything together & top with desired protein.
