WHAT IS ORGANICWINE?

WHAT SHOULD I LOOK FOR ON THE LABEL TO BE SURE THE WINE IS ORGANIC?

Organic wine is wine made from grapes grown in accordance with principles of organic farming, which typically excludes the use of synthetic chemical fertilizers, pesticides, fungicides and herbicides. With environmental and health concerns increasingly in the forefront, both vintners and consumers are pushing for “greener” wines. In addition to environmental considerations, vintners recognize that farming practices could also save money in the long run by preserving and improving their soil, as well as giving them a marketing advantage.

Wine that’s sold in Canada labelled with an “organic” claim must comply with Canadian Organic Regulations, no matter what country it’s from. In Canada, a product that’s labelled “organic” has been produced with a minimum of 95% organic ingredients. You may see a logo that reads “Canada organic” with an image of a maple leaf rising from behind a field. The logo is available to both local and imported products if they have been certified according to the requirements of the Canada Organic Regime. However, using the logo is voluntary, so it won’t necessarily appear on every product making an organic claim.

Wooden Skewers

METHOD: 1.) Place 1 cherry tomato, 1 lobster claw and 1 cube of mozzarella cheese onto each skewer. 2.) Place skewers onto a serving platter. 3.) Combine olive oil, balsamic vinegar reduction & basil; season with salt & black pepper. 4.) Drizzle dressing over skewers and serve. CHEF’S TIP: For an added twist, place lobster and tomatoes onto skewers and marinate in dressing. Place onto a preheated grill and cook until heated through. Add the mozzarella cheese and serve.

To assemble PEI Beef Sliders:

1 2 each Slider Buns 1 cup Stout-Tomato Jam

2 cups Spinach, removed from stems 36 each PEI Roast Beef, thinly sliced 1 pkg Goat Cheese, softened

Place slider buns onto a cutting board and cut in half lengthwise. Top bottom half of bun with tomato jam, spinach then 3 slices of roast beef. Spread goat cheese onto top bun and place onto slider. Serve immediately.

Canola Oil

1.) Heat a medium pot over medium-high heat; add canola oil. 2.) Add onions and reduce heat to medium-low. Sauté mixture until onions are fragrant and softened; add garlic. 3.) Add the stout and bring to a simmer, while scraping the bottom of the pot with a wooden spoon; cook until liquid has reduced by half. 4.) Drain liquid from canned tomatoes. Add the tomatoes and simmer for 15-20 minutes; stirring often. Add the molasses and season with salt & black pepper. 5.) Remove from heat and allow to cool before serving or refrigerate until ready to use.

METHOD: 1.) Preheat oven to 475°F. Drizzle beef with canola oil and season with salt & black pepper. 2.) Place onto a baking sheet. Place roast into oven and reduce temperature to 400°F. In the meantime, remove skin and pit from avocado and discard. Place avocado flesh, lime zest, and juice into a serving bowl; mash until avocado is smooth. 6.) Fold in sour cream and season with salt & black pepper. Remove potatoes from oven and serve hot with avocado dip.

Ginger Lime Pork Back Ribs

4 lbs pork back ribs 1 L golden gingerale 1 large onion, thinly sliced 1 Tbsp salt 1 Tbsp pepper Juice and zest of 1 lime 2 cups honey garlic BBQ sauce

1.) Preheat oven to 300°F. Place ribs bone side-down in a large casserole dish and then cover with onions, gingerale, salt and pepper. Cover tightly with foil and bake for 3 hours. 2.) Drain off the excess liquid, then turn the oven up to 425°F. Mix the lime juice and zest with the BBQ sauce, then brush over both sides of the ribs. 3.) Return the ribs to the oven and bake for 15-20 minutes, until sticky and lightly caramelized. Chop into portions and serve warm right away.

Double Stuffed Sweet Potatoes

3 medium sweet potatoes ½ cup sour cream 1 tsp cinnamon 1 tsp cumin 2 tsp chili powder Salt and pepper Any toppings you like, such as sliced peppers and onions, black beans and shredded cheese 1.) Wash 3 medium sweet potatoes and bake in a 350°F oven for 1 hour, until soft. Let the potatoes cool slightly, until cool enough to handle. Turn the oven up to 425°F. 2.) Cut the potatoes in half lengthwise and scoop the flesh out into a medium bowl. Mix in all the spices and then top as desired. Smoky Sriracha Spiked Queso Dip

2 barely-ripe mangoes, peeled and diced 2 Tbsp minced pickled jalapenos 1 small red onion, minced 1 handful of French cilantro, chopped 1 Tbsp pickling juice from the jalapenos Salt and pepper to taste

1 cup cream cheese 2 cups sharp orange cheddar 1 tsp smoked paprika 1/3 cup chopped green onions 2 tsp sriracha (or more, to taste)

Mix everything together in a small mixing bowl, cover and refrigerate for at least 1 hour. Serve with corn tortillas and enjoy!

Place everything in a medium heavy-bottom saucepan over low heat. Heat through, stirring constantly, until the mixture just begins to bubble. Serve right away with corn tortillas.

Perfect for Valentine’s Day!

Strawberry and Vanilla Bean Pavlovas

MERINGUES: 1 cold egg white 1/8 teaspoon cream of tartar 1/4 cup granulated sugar

during the cooling process. After cooling the meringues, move them to a serving platter. 5.) Make the whipped cream by beating together the heavy cream and powdered sugar. Add a splash of vanilla when the cream has soft peaks. 6.) Divide the whipped cream between the meringue shells. Top with the mixed berries and then set one meringue on top of the other to build two towers.

FILLING: 1/4 cup cold heavy cream 2 tablespoons powdered sugar 1 tsp vanilla bean paste 1 cup strawberries, washed and chopped and mixed with a little sugar 1.) First, make the meringues. Preheat the oven to 200°F. and line a baking sheet with parchment paper. 2.) In a medium bowl, add the cold egg white and cream of tartar. Beat with an electric mixer until foamy and soft peaks start to form. Slowly pour in the granulated sugar while continuing to beat on medium speed until soft peaks form. 3.) Use a spoon to make four circles of meringue on the baking sheet about ½ inch high. Use a spoon to make a slight divot in each circle.

In another small bowl, whisk together flour, granulated sugar, salt and baking soda. Add to wet mixture and whisk until smooth, about 1 minute. Divide batter evenly among 12 paper lined muffin cups (about 1/4 cup in each). Bake 17 - 19 minutes, until a tooth- pick stuck in the centre comes out clean. Let the cupcakes cool completely. Use a paring knife to cut a cone out of the centre of each cupcake about 1 inch deep and 1 inch wide, then fill the holes with cherry pie filling. In a mixing bowl, using an electric hand mixer, whip the cream on high speed until soft peaks form. Add the icing sugar and then whisk until stiff peaks form. Pipe the whipped cream over cupcakes then top each with a cherry and garnish with finely chopped chocolate or sprinkles. Store in an airtight container in the fridge for up to two days. Allow the cupcakes to rest at room temperature for about 20 minutes before serving.

Preheat oven to 350 °F . Place the chopped choco- late and cocoa powder in a medium bowl, then pour hot water over chocolate mixture and whisk until smooth. Whisk in canola oil, eggs, vinegar and vanilla.

Rum Banoffee Sundaes

2 Tbsp butter 1/3 cup brown sugar 2 Tbsp dark rum 1 tsp vanilla extract ¼ tsp cinnamon 1 large banana, peeled and cut into ½ inch pieces FOR TOPPING: Vanilla ice cream ¼ cup nuts of your choice, such as almonds or pecans ¼ cup whipped cream 1.) In a large, deep skillet over medium heat, melt the butter. Stir in the sugar, rum, vanilla and cinnamon. 2.) When the mixture begins to bubble, place the bananas in the pan. Cook just until the bananas are hot, about 1 to 2 minutes. Serve at once over scoops of vanilla ice cream. Top with nuts, caramel sauce from the pan and whipped cream.

1 oz Rossignol Raspberry Festival 1 oz Matos Orange Liqueur 2 drops rosewater Handful of fresh or frozen r raspberries 6 oz soda water 1.) Fill a tall glass with ice, then add liqueurs. Add the berries, then top up with soda.

2 oz Hendrick’s Gin ½ oz fresh lemon juice

1 oz Disaronno 1 oz McGuiness Cherry Brandy Cola 3 Maraschino cherries 1.) Fill a tall glass with ice. 2.) Add Disaronno and Cherry Brandy and stir. 3.) Top up with cola and garnish with maraschino cherries.

½ oz honey syrup (to make honey syrup, combine equal parts honey and hot water, mix till dissolved). 1.) Combine gin, lemon juice and honey syrup in a cocktail shaker, stir briefly to dissolve honey syrup, then fill with ice. 2.) Shake well for about 10 seconds and strain into a chilled cocktail glass.

I had been living off Island in Ontario where I worked in the Ontario hospitality industry for the company, Distillers. I became familiar with products such as Johnnie Walker Scotch and Tanqueray Gin. After gaining knowledge in the industry I found myself moving back to PEI, and a job came up at the PEI Liquor Commission and I felt it would be the perfect fit!

IN YOUR OPINION, WHATWERE SOME OF THE FAVORITES FROM 2017?

As we begin a New Year and reflect on 2017, there is no doubt that it was a great year with lots of new and exciting products! We can’t forget the release of Matos Anisette , a liquorice flavoured liqueur very unique in a bottle with crystal- lized sugar and fennel stem, made here on PEI. Another exciting product was Blue Lobster Vodka produced by N.S. Spirit Co. of Pictou, N.S. This vodka won a gold medal at the prestigious International Spirits Competition in San Francisco that drew more than 1500 competitors from over 60 countries.

Marlborough is wedged between mountain ranges and the ocean, near the top of the South Island. Wine has only been grown here on any real scale since the 1970s, but in these few decades the region has become recognized internationally as a wine paradise. Dark raspberry and boysenber- ry notes emerge from this soft and savoury wine and are rounded out with elegant but firm tannins. Enjoy with duck or grilled lamb.

The organic vineyards where the grapes for this wine are grown are in the Maipo Valley, Chile. The soil consists of sandy gravel and clay of medium depth with excellent drainage. Grapes are hand harvested from special lots and fermented in stainless steel with select yeast. The wine is aged for 12 months in oak barrels (70%) and stainless steel tanks (30%). An additional six months of bottle age takes place prior to release. Novas Cabernet Sauvignon Organic is deep ruby red in color with fresh cherries and chocolate on the nose. This wine has intense fruit flavours with tremendous

The organic vineyards in San Antonio Valley, Chile have thin rocky and clay soils. Harvested by hand, the grapes undergo fermentation in stainless steel to preserve their bright fruit character. The wine is then aged in stainless steel for eight months producing clean, focused fruit aromas and flavours. This wine is a light greenish yellow in colour with mineral and citrus on the nose alongside subtle tropical aromas. It has lively acidity and citrus flavours of grapefruit, and clementine and it also displays a note of green chili and white pepper that adds complexity. Try this wine with seafood or as an aperitif.

The Wairau Valley in the region of Marlborough is one of the sunniest and driest in New Zealand. A rare combina- tion of long, dry summers, bright sun and cool, clear nights provides perfect conditions for growing ripe, intense- ly-flavored fruit. This wine offers restrained mineral and stone fruit characters with accentuated grapefruit aromatics. It is balanced with elegance and texture. This wine will complement most of your favourite Asian dishes.

Merlot is certainly one of the most widespread vine in the wine world. It is suitable for many types of soils and climates. In the light soils of Friuli, it acquires aromatic fruitiness. This wine is intense red in colour with herbaceous scents, aromas of cherry with an excellent balance between acidity and softness.
