PEI Liquor Fresh New Flavours 2025

CLASSIC LOBSTER SUB

Total time 30 minutes | 4 servings

4 lbs cooked lobster, roughly chopped 4 tbsp mayonnaise, divided 1 tsp fresh lemon juice Salt Freshly ground black pepper 4 Kaiser rolls, toasted 4 leaves romaine lettuce 1/4 cup dill pickles, sliced

In a large bowl, mix together lobster, 2 tbsp mayo, lemon juice. Season with salt and pepper. Spread remaining mayonnaise on toasted Kaiser rolls, then layer on lettuce, pickles and top with lobster mixture. Wrap roll in parchment paper and bring to your favourite Island picnic location.
