P alma es una ciudad dejado su impronta, sobre todo árabes —que la llamaronMadinaMayurqa—y cristianos, que conquistaron la isla en 1229. El centro histórico conserva un marcado trazadomedieval, y lamejor manera de recorrerloes partiendode la imponente Catedral deMallorca, conocida como LaSeu, el mejormirador sobre la grandiosa bahía dePalma. La Catedral es un edificio gótico que atesora intervenciones artísticas de diversos siglos y se enorgullece de poseer el mayor rosetón original de las catedrales europeas de este estilo, conocido como el Ojo del Gótico, con casi 100 m 2 de superficie y más de 1.200 cristales de colores. Bajo la vieja muralla se encuentra ses Voltes, recinto militar transforma- do en espacio escénico y expositivo, y el parc de la Mar, pulmón urbano muy concurrido por la gente local. Junto al templo se yergue el Palacio de la Almudaina, antiguo palacio árabe, posteriormente cristianizado y refor- mado, delimitado en la parte marítima por la muralla que protegía la ciudad. A sus pies se extienden los jardines del Hort del Rei, con juegos de agua, bancos para disfrutar del ambiente y monumental quedesde sus orígenes ha vividode cara al mar, y por ella han recalado diversas culturas que han

Palma is a monumental city which has lived facing the sea from the mo- ment it was conceived, and as a result diverse cultures have arrived here and left their mark, above all the Arabs –who called the city Madina Mayurqa– and then Christians, who conquered the island in 1229. The historic city centre still retains its medieval layout, and the best way of seeing it is by set- ting off from the imposing cathedral, known as the Seu de Mallorca, the finest vantage point there is overlook- ing the magnificent Bay of Palma. The Cathedral is a Gothic building which houses artistic interventions from different centuries and prides it- self on having the largest original rose window of all the European cathedrals in this style, known as the ‘ Gothic Eye ’ , with a surface area of nearly 100 m 2 and comprised of over 1,200 stained glass windows. Below the ancient city wall lie ses Voltes, a former military enclosure which has been turned into a space for exhibitions and performances, and the parc de la Mar, an extremely popular green lung frequented by local people. Next to the church stands the Almudaina Palace, once an Arab palace but later Christianised and renovated, delimited on the sea side by the wall that used to protect the city.

This 13 th - century chant which proph- esies the end of the world is performed on Christmas Eve, during midnight mass (maiti- nes), in the cathedral. It has been declared Intangible Cul- tural Heritage by UNESCO. Paseo por la muralla. Un reco- rrido que transcurre siempre junto al mar por los tramos res- taurados de la antigua muralla que antaño protegía la ciudad de Palma. Stroll along the wall. A walk that runs on the seafront along the restored stretches of the ancient city wall which used to protect Palma.

At its feet the gardens of Hort del Rei stretch out, with water features, benches where one can sit and enjoy the atmosphere and Joan Miró. These gardens connect to the central passeig des Born, a boulevard presided over by two stone sphinxes and flanked by trees, and a lively shopping area which leads up to the street of avinguda de Jaume III , where you will find boutiques selling the top brands in clothes and accessories and a department store. In the nearby plaça de Weyler stands the Gran Hotel, one of the most impor- tant examples there are of Modernism, now converted into an exhibition space. Beside the Teatre Principal –which has an excellent cultural programme all year round– some steps lead up to the plaça Major, a large square with porticoes where shopping streets like Sant Miquel, Sindi- cat and Colón converge. This latter road connects to plaça de Cort , the administra- tive heart of the city, presided over by the city hall and the seat of the Consell de Mallorca, or island council, a good exam- ple of the Mallorcan Neo-Gothic style. The surrounding area contains the church of Sant Francesc –a Gothic

Un día en las carreras. En el Hipódromo de Son Pardo se ce- lebran carreras de trotones, ca- rros de dos ruedas tirados por caballos al trote. En las noches de verano se puede cenar junto a las pistas de competición. A day at the races. Son Pardo racetrack is the venue for trotting races, two-wheeled carts pulled at a trot by hors- es. En los alrededores se encuentra la iglesia de Sant Francesc —joya gótica con claustro donde reposan los restos del erudito mallorquín Ramon Llull—, los Baños Árabes, el Museo de Mallor- ca, el Parlamento de les Illes Balears y el Palacio March. Conviene perderse sin rumbo fijo por las calles estrechas y sombrías de esta zona de la ciudad, que obligan a levantar la vista para contemplar austeros pero imponentes palacios, edificados por la vieja nobleza y burguesía mallorquinas. Si algo singu- lariza a estos edificios son los patios, espacios interiores con trazos góticos o renacentistas, con escalinatas y ven- tanales, en los que todavía se respira un aire señorial. La cara marítima de la ciudad se puede recorrer a pie o en bicicleta por el largo passeig Marítim que conduce hasta los barrios marineros de es Molinar y es Portitxol. Frente al Real Club Náutico de Palma se alza la Llotja, edificio gótico convertido en sala de exposiciones, rodeado de una animada zona de bares y restaurantes.

The best idea is to wander aim- lessly through the narrow, shaded streets of this part of town, where you are forced to look upwards to contem- plate the austere yet imposing palaces constructed by Mallorca’s ancient nobles and bourgeoisie. One singular feature of these buildings are their patios, interior spaces with Gothic or Renaissance traits, flights of steps and large windows where one can still breathe in a stately atmosphere. The city’s seafront can be explored on foot or by bike down the long pas- seig Marítim promenade which leads to the seafaring districts of es Molinar and es Portitxol. Below is a small guide for enjoying the best flavours and atmospheres. Markets. To get to know Palma, you have to visit its markets, the city’s gastronomical culture spaces par excellence . The most emblematic ones are those of l’Olivar and Santa Catalina, always bustling and full of dozens of stalls selling fruit, vegetables and the very best meat and fish. They are also a good place in which to have an aperitif or eat, for instance oysters with cava, freshly-made sushi or ta- pas, drinking in the local atmosphere. Ancient bakeries. Palma is rich in ancient bakeries, some of which have a tradition going back more than a hundred years. Pa amb oli. Uno de los platos más sencillos y cotidianos de Mallorca es el pa amb oli, pan untado con tomate, aceite y sal, que se acompaña con quesos y embutidos locales, aceitunas amargas y un buen vino tinto. One of Mallorca’s simplest and most everyday dishes is pa amb oli , bread smeared with tomato, olive oil and salt, ac- companied by local cheeses and cold cuts, bitter olives and a good red wine.

Ses Illetes is a small tourist resort which owes its names to the islets that lie opposite the sandy beaches with all kinds of services as well as a great atmos- phere, just 9 km from Palma. On the beach of Portals Nous you can breathe in the glamorous atmosphere inherent in an exclu- sive marina, and it is separated from the quieter Portals Vells. The main tourist resorts on this part of the is- land are Palmanova, Magaluf, Santa Ponça and Peguera, endowed with beaches that are always busy.

L a Serra de Tramuntana vertebra el noroeste de la isla, desde Calvià a Pollença, protegiéndola de los fríos vientos del norte. Atraviesa 19municipios, que a veces se abren al mar con calas recón- ditas y algún arenal. No es un paisaje enteramente virgen: la montaña está sembrada de caminos empedrados, bancales, carboneras, hornos de cal y casas de nieve. Una intervención humana que, sin embargo, ha creado un paisaje armonioso, único en el mundo, declarado en 2011 Patrimonio de la Humanidad por la Unesco. Construcciones de piedra. Este paisaje, surcado por cientos de caminos, atrae a senderistas de todas las nacionalidades que realizan tramos de la Ruta de la Pedra en Sec o GR 221. Se trata de un sendero de gran recorrido que permite descubrir los paisajes construidos con la técnica de la piedra en seco de la Serra, y conocer las tradiciones, arquitectura, gastronomía y artesanía locales. La ruta tiene varios kilómetros a lo largo de los que se encuentra una red de refugios donde pernoctar (www.conselldemallorca.net) La pedra en sec es una técnica constructiva que no utiliza argamasa, basada en el encaje perfecto de piedras realizado por los margers, artífices de un paisaje secular.

The Serra de Tramuntana mountain range is the backbone of the north- west of the island, running from Calvià to Pollença, protecting it from the cold north winds. It crosses 19 municipali- ties which sometimes open up to the sea through hidden coves and the odd small sandy beach. It is not an entirely virgin landscape – the mountain is dotted with cobbled paths, terraces, charcoal pits, lime kilns and ice houses. A human intervention which has nevertheless created a harmoni- ous landscape, and one that is unique in the world, declared World Heritage by UNESCO in 2011. Stone constructions. This landscape, scored by hundreds of paths, attracts hikers of all nation- alities who walk along stretches of the Dry Stone Route (Ruta de la Pedra en Sec), or GR 221. This is a long-distance trail that allows one to discover the landscapes constructed using the dry stone technique so typical of these mountains and discover the local traditions, archi- tecture, gastronomy and crafts. The route runs for several kilometres and there is a network of shelters where one can spend the night along the way (www.conselldemallorca.net).

Dry stone walling, or pedra en sec , is a building technique that uses no mortar, based on fitting stones to- gether perfectly, and is carried out by margers , the architects of an age-old landscape. Paths were also built using stone, enabling one to walk through extremely beautiful places such as barranc de Biniaraix, in Sóller and camí Vell de Lluc, the path that links Caimari to the Lluc sanctuary. Well-known figures. This cultural landscape is also marked by figures who have found refuge or inspiration in it. In the 13 th century, between Valldemossa and Deià, the mystic Ramon Llull founded the Monasterio de Miramar, which was acquired centuries later, along with other properties such as Son Marroig, by the Archduke Ludwig Salvator of Austria, an enamoured protector of the north coast of Mallorca. The same landscape that drew artists and the musician Frédéric Chopin, writer George Sand or Englishman Robert Graves.

Campanet is the site of the most singular hydrological phenomenon of all Mallorca: after days of heavy rain, the so-called Fonts Ufanes bubble up from the ground - water springs with a flow as intense as 100 m3/second.

Pueblos de montaña MOUNTAIN VILLAGES

E n la Serra se alternan grandes pueblos como Localidades todas que han sabido con- servar su enorme patrimonio arquitectó- nico y cultural. Junto al mar se sitúan los núcleos turísticos—antiguas aldeas de pescadores—de Sant Elm, Port de Sóller o Port de Pollença. El interior. Merece la pena descubrir las poblaciones de la Serra recorriendo en coche las carreteras que las comu- nican, trayectos que revelan paisajes de montaña que a menudo confluyen con el mar. Se encontrarán pueblos de interior como Puigpunyent, a los pies de la montaña del Galatzó, la idílica aldea de Orient —con vistas panorámicas desde la iglesia—, Esporles o Bunyola, que mantienen su sabor tradicional. In the Serra large villages like Sóller, Andratx and Pollença alternate with small hamlets such as Orient, Bini- araix or Llucalcari. All of them have managed to preserve their huge archi- tectural and cultural heritage. Next to the sea we find the tourist resorts –former fishing villages– of Sant Elm, Port de Sóller or Port de Pollença. Inland. It is well worth discovering the towns and villages of the Serra by travelling along the roads that connect them up by car. These routes reveal mountain scenery which often converges with the sea. You will find inland villages like Puigpunyent, at the foot of the Galatzó mountains, the idyllic hamlet of Orient –which affords sweeping views from its church–, and Esporles or Bunyola, both of which preserve their traditional feel. Banyalbufar and Estellencs. Heading towards the sea you will come across Banyalbufar and Estellencs, with their coastline marked out by terraces where vines and ramellet tomatoes –a local rain-fed variety– are still grown. Valldemossa. Further north and in the midst of a valley Valldemossa
