TASTY CANARY ISLANDS SAUCE // DIE EXQUISITE SOSSE DER KANAREN LARICA SALSA CANARI

EN It’s no coincidence that in classical mythology the geographical setting of the so- called Fortunate Isles coincided with the real location of the Canaries. Those ancient writers spoke of a group of islands chosen as the place where deserving men couldmeet with the gods. Yet the reason why the Canary Islands are still referred to by this name has nothing to do withmyth but withmore ‘earthly’ motives such as climate or situation. Both, in turn, have contributed to develop newmotives for the Canaries to keep on being considered a truly exceptional area. Gastronomy is one of them. Their ‘fortunate’ locationmeant that, for centuries, these islands were ameeting point for different civi- lizations and, throughout history, one of the main stop-offs on international trade routes. As a result, local farmers learnt of herbs, spices and all kinds of products fromdistant lands, which they then turned to growing on the island’s volcanic soil. In turn, some of these products have given rise to quintessentially re- gional recipes such as mojo picón, the Canary Island sauce par excellence.

DE Es ist kein Zufall, dass die Kanarischen Inseln aufgrund ihrer einzigartigen Lage be- reits in der Antike „Glückliche Inseln” genannt wurden, über die es zahlreiche Legenden gab. Darin hieß es beispielsweise, dass dies der auserwählte Ort sei, an demdieMenschen, die es verdienten, die Götter treffen würden. Dass die Inseln auch heute noch so genannt werden, hat jedoch eher „irdische” Gründe, nämlich ihr Klima und ihre geografische Lage. Inseln wirklich ein besonderer Ort sind, z. B. wegen ihrer Gastronomie. Aufgrund der „glücklichen” Lage der Inseln waren siemehrere Jahrhunderte lang Treffpunkt verschiedener Kulturen sowie ein wichtiger Knotenpunkt auf den Handelsrouten. So lern- ten die kanarischen Bauern Kräuter, Gewürze und viele andere Produkte aus weit entfernten Ländern kennen, und wieman diese auf dem vulkanischen Boden der Inseln anbaute. Einige dieser Produkte sind dann zu wichtigen Zutaten der kanarischen Küche geworden, z. B. der bekannten Soße „mojo picón” (,scharfe Soße’). Beides hat dazu beigetragen, dass die Gründe immer mehr wurden, warumdie Kanarischen

ES No es casualidad que en las leyendas clásicas la situación geográfica de las que denominaban como las Islas Afortunadas coincidiese con el em- plazamiento del archipiélago canario. Aquellos escritos hablaban de unas islas escogidas como el lugar en el que los hombres que lomerecían se reunían con sus dioses. Pero la razón por la que hoy se sigue denominando a las Islas Canarias de esa forma nada tiene ver con aquello, sino con razonesmás ‘terrenales’, como su clima o su situación geográfica. Ambas cuestiones han propiciado, a su vez, el desarrollo de nuevosmotivos por los que seguir considerando a las Canarias como un territorio realmente privilegiado. Su gastronomía es una de ellas. La ‘afortunada’ ubicación de las Canarias ha favorecido que, durante siglos, las islas hayan sido punto de encuentro de diversas civilizaciones y uno de los principales enclaves en las rutas comerciales a lo largo de la historia. Gracias a ellas, los agricultores canarios han podido cono- cer hierbas, especias y todo tipo de productos procedentes de regiones lejanas y cultivarlas en las tierras volcánicas del archipiélago. Algunos de estos productos, a su vez, han dado origen a rece- tas tan propias de las islas como el mojo picón, la salsa canaria por excelencia.
