THE BAIN MARIE

PURPOSE OF THE TRAINING EXERCISE: To ensure that team members know how to clean Bain Marie safely TRAINING AIDS:  Company approved multi-purpose detergent, sanitiser and manual pot wash detergent  Disposable clean yellow cloths, paper roll  PPE- white disposable gloves and apron or rubber gloves TRAINING METHOD: This is a practical training exercise. The trainer should demonstrate how to clean the Bain Marie to the group whilst referring to these training notes.

ASK QUESTION TO GROUP : Why is it important to clean the Bain Marie daily CONFIRM CORRECT ANSWER:  It’s a legal requirement  It will work correctly and keep the food to the correct temperature EXPLAIN TO THE TEAM: Bain Marie like all kitchen equipment require regular cleaning to ensure they work at full capacity. This can be done by regularly cleaning the equipment regularly and changing the water often.

Cleaning the Bain Marie

 Unplug the Bain Marie and allow to cool completely before emptying  Remove the pans and any easily detachable parts i.e. knobs and lids  Place these parts into a sink of hot soapy hand wash detergent to soak.  Scour any heavy soiled parts, rinse and allow to air dry  Remove the water from the unit by turning the exterior tap to the open position and allow the unit to drain into a bucket.  Fill the base with water and a multi-purpose detergent, descale if required  For dry units (no water) clean any debris out of the bottom of the well and follow the remainder of the instructions  Switch unit on and allow water to heat up to 50ºc  Scrub interior of Bain Marie with a green scourer to remove heavy build up  Drain and rinse to ensure all chemical has been removed  Refill with clean water and replace all elements Cleaning the outside of the unit  With multi-purpose detergent spray the outside of the unit  Wipe clean, for heavy build up use a green scourer  Spray with sanitiser once everything is back in place and leave for one minute. wipe with paper towel

Conclude the training exercise by allowing the trainees to practice draining, cleaning and refilling the Bain Marie Manager to record the training
