THE COMBI OVEN

PURPOSE OF THE TRAINING EXERCISE: To ensure that kitchen team members know how to clean the Combi Oven effectively .

TRAINING AIDS:  Company approved multi-purpose detergent and sanitiser  Clean disposable yellow cloths, paper roll  PPE- rubber gloves or disposable white gloves and apron

TRAINING METHOD: This is a practical training exercise. The trainer should demonstrate how to clean the Combi Oven to the group whilst referring to these training notes.

ASK QUESTION TO GROUP: Why is it important to clean the Combi oven CONFIRM CORRECT ANSWER:  It’s a legal requirement to keep all equipment clean

 It will prolong the life of the equipment  The equipment will work to full capacity

EXPLAIN TO THE TEAM: To ensure food safety standards and cleanliness the Combi oven should be cleaned every day.

Cleaning the Combi Oven Remember the chemical may be classed as corrosive.  Cleaning the Combi oven is not difficult using the self clean mode  Remove any food debris and water remaining in oven

 Ensure all cleaning fluids are full  Check the water filter is working  All grids/trays are fully inserted into the oven  Check the arm is free from debris and easily moved – if not then clean using multi-purpose detergent and a scourer  Clean the inside seals and check they are intact  Switch the machine to cleaning mode.  Check that all trays and sides are clean, manual cleaning may be required if not.  Spray the outside with multi- purpose detergent and clean with a yellow cloth, Scour where there is

heavy build up. Rinse with clean water and wipe over with paper roll  Apply sanitiser solution on outside surfaces, seals and handles  Allow 1 minute contact time and wipe with paper roll

 If you need to change the cleaning fluid beware the syphon tube will be covered in chemical and can flick as it comes out of the bottle – beware of eye injuries, use safety goggles and disposable gloves to handle the pipe if you are unsure.  Open the replacement bottle and position it next to the empty one so the pipe can be transferred immediately
