Reassemble the Machine
Before the ice cream can be frozen the machine needs priming. This ensures that you have the correct air to mix ratio in the barrel
Pour in 1 litre of mix
Hold the draw valve in the open position This will force the last of the sanitiser from the machine When you see clear mix running – close the draw valve Continue to pour mix into the hopper checking the bubbles around the mix feed hole When the mix stops bubbling place the mix feed tube into the hole with sanitised hands (make sure that the hole is at the bottom) Press “Auto” mode
NB - Allow 10 – 15 minutes for the mix to freeze
EXPLAIN TO THE TEAM:
The ice cream machine should be cleaned after every use as part of your daily cleaning duties
Daily cleaning Sanitise around the freezer door area including drip tray Remove the hopper lid and sanitise Remove air orifice from top of feed tube clean/sanitise and replace

Conclude the training exercise by allowing the trainees to practice draining and cleaning the ice cream machine
