You must always use the Safety Grip when slicing food items. If you need to slice long items such as a cucumber you must cut these into short lengths of approximately 4 or 5 inches to ensure the item is held securely in the Safety Grip

This ensures you can safely slice the whole food item without any risk of cutting your fingers.

Setting up the Mandolin

Once you have set the legs on the mandolin you will need to insert the blade / blades depending upon the type of cut you require.

Insert the Blades

The main straight or serrated blades slide in (the bottom of the blade has a groove in it which slides over a fold on the mandolin. Slide the blade in with the groove side down)

The blade is pushed in from one side only and has a securing lug so push the blade until it clicks. You need to push this down to remove the blade. If you are using any of the Julienne blades they slide in from the opposite side with the blades facing up.

Only handle the blade using the moulded holder at the end. This will prevent cuts.

Adjust the slice thickness

The bottom plate is adjustable to allow the thickness of the food to be altered. The plate is held in place by the two guide plate knobs on each side of the plate by the back legs

Loosen the knob at each side and adjust the plate.

Ensure you keep your hands and fingers away from the Blade whilst doing this.
