Care and Cleaning The blades cannot be sharpened – if the blade is blunt or damaged it must be replaced

Never clean the mandolin with the blade in place. This must be removed before cleaning starts. Because the mandolin is able to slice very thinly, leftover vegetable slices can easily get stuck on and underneath the blades when you're finished. You can either wash the blades by hand by removing them very carefully or use a dishwasher, but they should be dried immediately to prevent rusting.

When cleaning the blade always use an action that travels from the back of the blade towards the cutting edge. Never clean along the edge of the cutting blade or backwards from it. You will be very likely to cut yourself.
