ASK QUESTION TO GROUP: What temperature must the oil not be above? And why? CONFIRM CORRECT ANSWER:  40ºc. To ensure nobody burns themselves. ASK QUESTION TO GROUP: What type of container must the oil be emptied into? CONFIRM CORRECT ANSWER:  Company approved clean, dry, metal holding container with carrying handles and a cover or lid or an empty oil container with a lid. ASK QUESTION TO GROUP: What must you use to remove debris and wipe out the fryer and why

must it be switched off at this stage? CONFIRM CORRECT ANSWER:  To improve the quality of the oil and the food in it  So anybody carrying out this task doesn’t burn themselves. ASK QUESTION TO GROUP: Why is it important that the fryer is dry when pouring the oil back in? CONFIRM CORRECT ANSWER:  To prevent spitting when the oil gets hot again. Any water turns to steam and can spit causing hot oil to be thrown out of the fryer.

ASK QUESTION TO GROUP: What must you ensure when pouring the oil back in? CONFIRM CORRECT ANSWER:  You can safely lift the container, and if not ask for assistance  The oil pours slowly through the filter  The oil drainer is closed  You must ensure the thermostats (metal pipes in the bottom) are covered before turning the fryer on to prevent the oil overheating. ASK QUESTION TO GROUP: What must you ensure when the job is completed? CONFIRM CORRECT ANSWER: The area is clean and no spillages are left ASK QUESTION TO GROUP: Why are 2 people required to move the oil? CONFIRM CORRECT ANSWER:  One to carry the oil and one to walk the route in front to open doors and to warn others. Extra special care should be taken whilst walking through doors or down stairs etc. ASK QUESTION TO GROUP: How can we reduce the risk of slipping or falling when carrying the waste oil? CONFIRM CORRECT ANSWER:  Keep the route free from trip hazards.  Make sure the floor is dry and any grease and spillages are mopped up.  Wear sensible no-slip shoes .
