OVEN AND RANGE TOP
PURPOSE OF THE TRAINING EXERCISE: To ensure that kitchen team members know how to clean the oven safely.
TRAINING AIDS: Company approved degreaser, manual pot wash detergent, multi-purpose detergent and sanitiser Clean yellow disposable cloth Paper Towel Relevant PPE- Gauntlets, mask and goggles Yellow wet floor sign
TRAINING METHOD: This is a practical training exercise. The trainer should demonstrate how to clean the oven to the group whilst referring to these training notes.
ASK QUESTION TO GROUP: Why is it important to clean the oven and range top every day? CONFIRM CORRECT ANSWER: To ensure the food is properly cooked Improve the quality of the food To ensure the oven works effectively Reduce the risk of fires It is a legal requirement to keep equipment clean Reduction in repair costs
Daily cleaning Spray the range top with multi-purpose detergent and wipe clean Remove the baking trays and wash through dish washer Spray front and sides of equipment with multi-purpose detergent Scour if required Wipe clean Weekly cleaning Wear gauntlets, face mask and goggles Switch off and isolate gas Switch ventilation on Protect floor with paper Remove the range top wash with soapy manual pot wash detergent in the sink, scour where necessary Remove burners and scour clean Remove trays and runners, wash in soapy manual hot wash detergent or through dishwasher Remove filters to the side of the door and wash through soapy hand wash detergent Clean wheels with multi-purpose detergent spray and scour where necessary Spray inside with degreaser – leave for 20 minutes before scouring Scour where required to remove heavy build up of grease and carbon Wipe down with clean water Mop up any spillages and place wet floor signs over Trainer to demonstrate the cleaning of the Oven and Range
