CANOPY AND EXTRACT

PURPOSE OF THE TRAINING EXERCISE: To ensure that staff with responsibilities for cleaning the canopy and extract do this in a safe and hygienic manner

TRAINING AIDS:  Goggles, gauntlets  Company approved multi-purpose detergent  Scouring pad  Hose pipe

 Ladders if required  Yellow wet floor sign

TRAINING METHOD: This is a practical training exercise. The trainer should demonstrate how to clean the canopy and filters to the group whilst referring to these training notes. EXPLAIN TO THE TEAM: Accumulation of grease deposits in the extraction systems present a significant fire hazard. No matter how efficient the extraction system or your regular filter cleaning programme this build up of grease is inevitable. Apart from the fire risk, the accumulation of grease in the extraction system reduces ventilation efficiency resulting in overheating, excessive humidity and a continuing source of unwanted smells and smoke throughout the building and outside areas.  If ladders are required to remove/fit the filters the company ladder safety policy must be followed  Do not overstretch or stand on kitchen equipment  Ensure the floor is dry and level before using ladders  Remove and refit filters before the cooking range and fryers are switched on  Goggles and gauntlets must be worn whilst cleaning the filters and canopy  If you use paper towels to dry the grease gullies and canopy ensure they are removed as they can become a fire hazard  Ensure extract system is turned off before commencing cleaning.  Never stand on equipment to access the canopy or filters, use the small set of approved step ladders.  Never undertake this task when equipment has been turned on or is hot and cooling down, severe burns are a risk in the event of an accident.  Some filters can have sharp edges where metal has been folded, be aware of this and report any issues to your manager so they can be resolved. Before commencing cleaning the trainer must inform the team:

Extract Grease Filters – daily task

 Remove filters and place in equipment wash sink or outside area  Spray multi-purpose detergent onto each filter  Leave for 15 mins in a safe area  Remove dissolved grease with wash spray or hose pipe  Remove any heavy grease build up with a scourer  Leave to dry before placing back into canopy  Hose down yard/sink areas
