THE GANTRY AND WORK BENCHES

PURPOSE OF THE TRAINING EXERCISE: To ensure kitchen teams know how to clean correctly reducing the risk of cross contamination

TRAINING AIDS:  Company approved multi-purpose detergent and sanitiser  Clean disposable yellow cloth and paper roll  Green scourer  Hot water  PPE- white disposable gloves and apron or rubber gloves

TRAINING METHOD: This is a practical training exercise. The trainer should demonstrate how to clean the Gantry and work benches to the group whilst referring to these training notes.

ASK QUESTION TO GROUP : Why is it important that all workbenches and gantries

are cleaned on a regular basis? CONFIRM CORRECT ANSWER:  It’s the law  Prevent cross contamination  Prevents bacterial build up

How to clean your worktops and gantry’s

Daily:  Remove any excess food debris, utensils and chopping boards  Spray surfaces with the multi-purpose cleaner and remove debris with yellow cloth or paper roll  Scour heavily soiled areas if required. Wipe clean with clean yellow cloth  Rinse with clean water  Spray all surfaces with sanitiser and allow 1 minute contact time  Wipe with paper roll and allow to air dry Weekly or as often as required  Spray legs, wheels and feet with multi-purpose detergent. Use a scourer on heavily soiled areas  Wipe clean with a yellow cloth  Spray gantry’s and worktops underneath with multi-purpose detergent around the lights and switches, ensure all lights and switches are switched off - Allow hot lights to cool before cleaning  Halogen heat lamps should not be touched with bare hands, oil from your skin can affect the lamp due to the high operating temperatures and risks skin burns / shortening build life / causing it to shatter. Bulbs must be removed and cleaned around using a cloth.  Scour heavily soiled areas Wipe with a yellow cloth and rinse with clean water  ASK QUESTION TO GROUP: What must you use to clean the equipment?
