Savoury Puff Pastry Tarts Ingredients: 1 Sheet Puff Pastry, thawed 400g Baby tomato medley, sliced 75g bocconcini, torn 1 tablespoon extra-virgin olive oil Basil Leaves

1 egg whisked for egg wash 1/2 purple onion thinly sliced Method:

Pre-heat oven 220c or 200c fan forced Line a baking tray with baking paper 1. Cut sheet of puff pastry into four squares (leave a 1cm edge on all sides of each and prick centre of pastry only with fork. 2. Brush with egg wash and bake 12 minutes or until golden and puffed. 3. Use a clean tea towel to press down the centres of tarts. 4. Arrange tomatoes, purple onion, bocconcini, basil onto tarts. 5. Season with salt and black pepper and drizzle with oil. Serve and enjoy!!
