Jam Drops


125g butter, softened 1/2 cup caster sugar 1 tsp vanilla essence 1 egg 1 1/4 cup sr flour 1/3 cup strawberry jam

Method Preheat oven to 180 degrees. Line a tray with baking paper. Mix butter, sugar and vanilla in a bowl until pale and creamy. Add the egg and sifted flour, mix well.

Use lightly floured hands to roll mixture into balls. Place on the prepared trays. Use a lightly floured finger to make a dent in the centre of each ball. Spoon jam into the centre of each biscuit. Bake for 15 minutes
