Pumpkin Cider Donuts From page 18 Makes 12-16 Donuts.
Grandma’s Pumpkin & Walnut Pie From page 20 Serves: 8
Ingredients
Ingredients
• 3/4 cup fresh apple cider • 4 cups all purpose flour • 1 tsp pumpkin pie spice • 2 tsp baking powder • ½ tsp salt • ½ tsp baking soda • 1 cup brown sugar • ¼ cup soft butter • 2 eggs • 1 cup pumpkin puree • Cinnamon sugar for dusting
• 1 prepared graham cracker pie crust • 2 cups (500ml) pumpkin puree • 1 (300ml) can sweetened condensed milk • 1 egg • 1¼ tsp. (7g) ground cinnamon
• ½ tsp. (3g) ground ginger • ½ tsp. (3g) ground nutmeg • ½ tsp. (3g) Kosher salt • ¼ cup (60g) packed brown sugar • 2 tbsp. (30g) all-purpose flour • 2 tbsp. (30g) butter • ¾ cup (180g) chopped walnuts
Directions
Directions
1. Preheat a deep fryer or dutch oven filled halfway with canola oil to 350F. 2. In the bowl of a mixer, combine the butter, sugar, eggs and pumpkin. Use a paddle attachment to beat the mixture until pale and fluffy. 3. Add the remaining dry ingredients to the bowl of the mixer and stir a couple of times, then add the cider and beat a few more times, scraping down the sides of the bowl as necessary. 4.Use a rolling pin to roll the dough to ½ inch thick out on a VERY well-floured surface. Cut donut shapes with round cutters. 5. Carefully dip the cut donuts into the hot oil using a slotted spoon or spatula. Cook for about 60 seconds per side, then drain on paper towel for about 5 minutes. 6. Place about a cup of white sugar in a large bowl and stir in a Tbsp of cinnamon (more or less if you like). Dip the fried donuts in the sugar mixture and make sure they are coated all over. Transfer to a cooling rack to cool fully.
1. Preheat oven to 425 degrees Fahrenheit.
2. In a mixing bowl, combine the pumpkin purée, condensed milk, egg, ¾ teaspoon cinnamon, ginger, nutmeg and salt. Pour batter into the pie crust. Bake for 15 minutes and reduce oven temperature to 350 degrees Fahrenheit. 3. While the pie is baking, combine brown sugar, flour, and remaining cinnamon in a small bowl. 4. Cut in the butter or margarine until the mixture is crumbly and stir in walnuts. 5. Sprinkle mixture evenly over the pie and bake for 40 minutes or until a knife inserted 2 centimeters from the edge comes out clean.

6. Cool. Transfer the pan to a wire baking rack and let the bread cool for 10 minutes. Then run a knife around the edges of the bread and carefully invert the bread onto the wire baking rack to continue cooling for 5-10 more minutes. Then slice, serve and enjoy!
Pumpkin Risotto with Aged Gouda From page 24 Makes 2 Servings
From page 26 Makes enough brine for one 1 8- to 20-pound turkey.
Ingredients
Ingredients
• 2 Tbsp butter • 1 small yellow onion, minced • 1 clove garlic, minced • 1 cup arborio rice
• 7 Litres cold water • 1 1/2 cups coarse salt • 6 bay leaves • 1 cup sugar • 2 tablespoons whole black peppercorns • 1 teaspoon black or brown mustard seeds • 1 fresh whole turkey (18 to 20 pounds), patted dry • 1 bottle dry Riesling • 2 medium onions, thinly sliced • 6 garlic cloves, crushed • 1 bunch fresh thyme
• 1 cup diced pumpkin • 1/4 cup dry white wine • 2 cups chicken or vegetable stock, warmed • 2 more Tbsp butter • 1/3 cup grated aged Glasgow Glen Gouda • Salt and pepper to taste 1. In a medium saucepan, heat the first 2 Tbsp butter over medium-low heat. Add the onions and garlic and saute for 3 minutes, until the onions are soft. 2. Add the rice and stir it well to coat the rice in butter. Cook another minute. 3. Add the white wine, then let in absorb into the rice, stirring constantly. Stir in the pumpkin. 4. Add the warm stock ¼ cup at a time, stirring constantly. Wait until all the liquid has been absorbed before adding more stock. 5. Keep adding more stock until the rice is softened and no longer hard in the middle – about 15 minutes. Stir in the remaining butter, then add the cheese (save a little for the top). Season to taste with salt and pepper. 6. Transfer the risotto to your serving bowls, then top with a little more cheese and serve right away! Directions
