What is Gluten?

Gluten is a general name for the proteins found in

wheat, rye, barley and triticale (a cross between

wheat & rye). Gluten helps foods maintain their

shape, acting as a glue that holds food together

and is found in many types of foods.

Keep dough frozen. (0 degrees F+/-10 Degrees F)

Place cookie dough on parchment lined sheet pan approximately 2” apart.

3.

Prior to baking let dough stand at room temperature about 30 minutes.

4.

Ensure dough is kept away from products containing allergens. (Lightly cover with a piece of parchment paper)

5.

Set your oven for 10 - 12 minutes at

325˚F Convection

OR

350˚F Conventional

oven.

6.

Rotate the pan halfway through the baking time for an even bake.

7.

Cool the cookies on the pan. (lightly cover with a piece of parchment while awaiting service)

8.

Using a glove or GF-designated serving utensil, transfer baked cookies to a plate for service.
