The vines imported into the Champagne region by the Romans

at the beginning of the III century were cultivated and improv

ed by the religious orders, who immediately recognized that

wine was a source of progress, of activity and of health: it

was therefore under the protection ofthe monasteries that most

of the vineyards rose to prosperity.
