Brandy is distilled from white wines. The grapes are pressed

and the juice after a few weeks of active fermentation is ready

for distillation. The apparatus used in the Charente is the old

pot still.

The liquid obtained is the delicious Brandy of Cognac. It is

drawn off into good new oak casks, there to be stored for years

until it is mellowed by age,reduced in strength by evaporation,

coloured by the wood,and has gained the inimitable aroma for

which old Cognac Brandy has become famous.
