A microwave or a steam oven?
The
clever solution to this dilemma in kitchen
design, especially if challenged by lack of
space, is an innovative Miele steam oven with
microwave.
Use these built-in appliances in microwave
mode when quick heating is critical or achieve
the exceptional, healthy quality-enhancing
properties of steam when in steam oven
mode.
Whether a Miele DGM 6401 or DGM 6800 is
the choice, these DGM appliances generate
steam using the same MultiSteam technology
as all other Miele steam ovens. Thanks to a
powerful (3.3 kW) external steam generator
and eight steam inlet ports in the rear panel
of the oven interior for fast and uniform steam
generation and distribution.
In microwave mode, these DGM appliances
have seven power settings to the maximum
of 1000W, plus special features such as a
QuickStart function, for short heat-up times,
and an automatic programme for popcorn.
To maintain the nutritional and flavoursome
aspects of food items, gentle defrosting
and uniform cooking are easily achieved in
one single composite programme in which
microwave energy alternates with steam.
This cleverly prevents food from drying out.
The operating instructions, accompanying
each DGM model, contain several examples
of the best ways to alternate between steam
and microwave cooking.
In addition, the Miele steam ovens with
microwave include a ‘sous vide’ cooking
setting, enabling DGM appliances to cook
vacuum-sealed food at relatively low
temperatures over an extended period of
time.
The DGM range comprises the stainless-
steel Miele DGM 6401 with DirectSensor.

steel, brilliant white, obsidian black and mink,

1 tblsp ground coriander
2 tsp turmeric
2 tsp ground cumin
1 tsp paprika
1 tsp cayenne pepper
750g diced pork
2 tblsp oil
2 onions, thinly sliced
4 dried curry leaves
1 tsp grated fresh ginger
2 1/2 cups chicken stock
4 tblsp fruit chutney

Ingredients
Method
Combine flour, coriander, turmeric, paprika
and cayenne pepper into a plastic bag.
Add the pork and shake to coat well. Heat
Oil in a large pan, add the onion, curry
leaves and ginger and cook 3 mins until
tender. Remove from pan. Add the pork to
pan and cook over medium-high heat 3
mins or until browned all over. Return the
onion mixture to the pan, add stock and
chutney, bring to boil then reduce the heat
to low and simmer gently for 30-40 mins.
Serve with rice or mash.
