HELPFUL TIPS: PAIRINGWINEWITH LOBSTER

Growing up in Nine Mile Creek on the south shore of the Island, there was never a question about what we were having for dinner on Mother’s Day. Lobster is King. A quick trip down to the wharf usually resulted in a few pounds of delicious of crustaceans. Homemade potato salad, coleslaw, broccoli salad and of course mom’s homemade bread are all part of the experience. Our family have been fans of the traditional boiled (in briny water) lobster, and served chilled with drawn butter on the side for dipping. For the last number of years we have seen the wine drinkers among us hunting for the ultimate pairing. Some like the crispness and steely minerality of Chablis, while others preferred a more buttery Chardonnay from California. The die-hard Sauvignon Blanc fans were all about Sancerre until a bottle of New Zealand Sauvignon Blanc was introduced. Some of the more mature (in age) among us usually like a Riesling from Germany or Ontario with its great balance of sweetness and acidity. Personally, I love the bone dry fresh acidity of a Loire valley Muscadet with any shellfish, whether it’s lobster, clams or oysters.

When and where is the PEI Festival of Wines?

This year the festival is going to have a new tasting event on Thursday, May 24th called Prestige . How does this event differ from the Friday and Saturday tastings? New to the PEI Festival of Wines experience is the Prestige Tasting taking place at the Eastlink Centre on Thursday, May 24th from 7pm-10pm. This event will feature over 325 wines from the most reputed wine regions of the world including 75 iconic fine and rare products available exclusively at the Prestige Tasting. A limited number of tickets will be available for this highly anticipated event. The intimate atmosphere will provide the opportunity to interact with winemakers, winery staff and agents. To enhance your experience, complimentary hors d’oeuvres will be provided by local chefs. Tickets are on sale now for $75.00 plus tax and service charge and after May 20 the price will be $85.00 ++.

The PEI Festival of Wines, which is the largest tasting event of the year, will be held at the Eastlink Centre in Charlottetown on Thursday, May 24th, Friday, May 25th and Saturday May 26th from 7pm - 10pm. There will be over 250 wines from around the world to sample and explore. Chile, a region that has been producing wine since the mid 16th century, is the Wine Festival’s featured country. PEI Liquor will have an on-site boutique where products will be available to purchase. Tickets to the Grand Tastings are not required to shop at the boutique. Our knowledgeable product advisors will be at the boutique to assist and advise customers with their purchases.

Howmuch is a ticket to the festival?

Advance ticket pricing for the Grand Tastings is in effect until May 21st for $43.00 plus tax and service charge and after May 21st tickets are $49.00 ++. Tickets to the Grand Tastings tend to sell out quickly so purchase your tickets early by visiting the festival’s website at peiwinefest.com

How do I use my tasting booklet?

PEI FESTIVAL OFWINES ON-SITE BOUTIQUE HOURS

For those who are attending the Festival for the first time, water and a tasting booklet are essentials for getting the most enjoy- ment from the evening. Even the most experienced taster can be overwhelmed by the 250 plus wines which will be available to taste. Utilizing the tasting booklet will help create a strategy to ensure you have enough time to sample and socialize. Prior to the festival visit peiwinefest.com to preview the list of products to develop a tasting plan. This is a great time to explore coun- tries, regions or producers you have not yet discovered. The tasting booklet provides room for taking notes and it is best to have your own personal rating system to rank your favourite wines. Some people use a star rating others a point system. Whatever your approach remember to taste lighter styles before moving on to more full-bodied wines.

Belle River Crab Cakes

3.) Bake for 10 to 12 minutes, then turn the cakes over and continue baking until light golden, about 5 more minutes. Let stand for about 5 minutes before transferring to a large platter.

1 egg 1/3 cup mayonaise ¼ cup chopped fresh parsley 1 Tbsp Dijon Mustard 2 tsp Old Bay seasoning 1 lb Belle River Crab meat, thawed and excess liquid squeezed out

1 cup panko bread crumbs 1 Tbsp olive oil for brushing Lemon wedges for serving

1.) Preheat your oven to 400°F and line a baking sheet with parchment paper. In a large bowl, whisk together mayon- naise egg, parsley, Dijon and Old Bay. Gently stir in the crab just until combined. 2.) Scoop out heaping tablespoons of crab mixture, roll in panko, and form into 1-in.-thick cakes. Repeat with the rest of the mixture. Place the cakes on your prepared baking sheet about ½ inch apart. Lightly spray or brush the tops of the cakes with olive oil.

1 ½ oz Portobello Road Gin No. 171 1 oz lemon juice ½ oz lavender syrup* Soda water to taste Rosemary sprigs and lemon slices to garnish Combine gin, lemon juice and lavender syrup in a cocktail shaker filled with ice and shake vigorously for 30 seconds. Strain into a short glass filled with ice, then garnish with lemon and rosemary. *To make the lavender syrup, combine ½ cup water and ½ cup sugar in a small saucepan. Bring to a simmer, add ¼ cup lavender blossoms, then remove from heat. Let stand for 10 minutes, then strain and refrigerate until ready to use.

½ oz Rossignol Cassis 1 slice of lemon A small handful of frozen blueberries 4 oz Bartenura Moscato A small handful of freshly picked violet blossoms, washed thoroughly In a tall glass, muddle together the Cassis, lemon and blueberries until macerated. Fill the glass with ice then add flowers and Moscato. Stir gently to combine.

2 oz Hendrick’s Gin ½ oz Martini Dry 2 drops of white wine vinegar 1 chive flower, crushed

Combine all ingredients in a martini shaker filled with ice and shake vigorously for 30 seconds. Strain into a chilled martini glass, garnish with more chive blossoms.

CEDAR PLANK SALMON

Perfect Pairings

Makes 6 portions.

2 Cedar Planks, submerged in water overnight or for at least 4 hours. 6 x 5-6 oz boneless skinless salmon portions (all roughly the same shape)

1 lemon, cut into thin slices 6 small sprigs of rosemary Salt and pepper to taste

Preheat your grill to 450°F . Season the salmon on all sides with salt and pepper, then place it directly on the cedar plank (3 per plank). Break the sprigs of rosemary in half and place around the salmon, then lay a couple of the lemon slices on top of each piece of salmon. Place the planks directly on the grill and close the lid of your barbecue. Cook for 12-15 minutes, until the salmon is cooked through and almost opaque.

2 lbs baby red potatoes, halved Juice of ½ lemon ¼ cup olive oil 1 head of garlic, broken into cloves 1 Tbsp dried oregano 1 tsp dried dill Salt and pepper to taste

Preheat your grill to 450°F Combine everything in a large bowl and stir well to combine. Lay out a 12 x 24 inch piece of heavy-duty tinfoil then lay the potato mixture right in the middle of one half. Fold over the other half of the tinfoil and crimp the edges to make a tinfoil “packet”.

Serves 6.

2 lbs PEI mussels, washed and drained 1 lb dry-cured chorizo sausage, sliced about ¼ inch thick ¼ cup olive oil 1 Tbsp minced garlic 2 Large ripe tomatoes, chopped Handful of fresh parsley leaves for garnish Fresh crusty bread for serving Pre-heat your grill to 450°F . Grill the chorizo pieces for about 3 minutes on each side, until lightly charred, then remove from heat. Place a large dutch oven directly on the grill, add the olive oil and garlic and saute for 2 minutes, until the garlic is soft and translucent. Add the chorizo and tomatoes, stir everything together and then let it come to a simmer. Add all the mussels, stir to combine and then put a tight fitting lid on the pot. Cook fo 6-8 minutes, stirring halfway through, or until all the mussels are open. Sprinkle with fresh herbs and enjoy with some crusty bread.

WHAT STYLE OF BEER SHOULD YOU STARTWITH?

One of the most overwhelming decisions when cooking with beer is deciding which of the many styles to use.

Pale ale is really the most versatile for cooking; it has a balance of hoppy, rich flavors and fruity overtones. Be careful of any super-hoppy IPAs or APAs, which are excellent for drinking yet can be too bitter for cooking. Brown ales can be used interchangeably with pale ales but also lend themselves particularly well to cheese dishes and rich stews and braises. After you've tasted and cooked with these styles of beer, you’ll be ready to explore other flavors. Try strong Belgian ales in robust meat dishes, fruit beers in desserts, wheat ales in fish and poultry—and the list goes on. Remember to think about balancing sweetness and bitterness, acid with richness. Crack open your favourite brew and get cooking!

COOKINGWITH CRAFT BEER

Adding beer to a recipe can really change the character of the dish; it can enhance particular ingredients, help blend the flavors of the dish, or just add that little zing that your meal might be lacking.

It takes some time and experimentation to find out how to best incorporate beer into your cooking style. If you are already an experienced cook, then rest assured it has its place in just about every technique: baking, braising, deglazing, deep-frying, or marinating. But the intensity and range of flavour in different beers require a bit of planning to strike the right balance. There are three main points to consider when cooking with beer:

The natural carbonation in beer means it’s great for baking, plus any sweet malt or grain flavours are welcome in many batters or breads. Beer battered fish and chips is a great example of this principle, where the beer acts as a leavening agent and makes the batter very light and crisp. Try Molten Chocolate Stout Cakes made with Guinness or Upstreet Black Tie Affair Vanilla Cranberry Stout

Beer tenderizes meats, making it perfect for marinades or long braises. Robust dishes like stews are a good place to start before experimenting with the subtleties beer can have on more refined flavorings.

Beer is naturally bitter from the added hops, so it does well when blended with sweeter ingredients. Sweeter vegetables like onions, carrots or corn are a great counterpoint to bitter beers. Caramelized onions are a classic example of a sweet vegetable that is ideal with beer. Bitter hop flavour also helps balance the richness of creamy or cheesy dishes like mac and cheese.

Along the Margaret River, the peak summer & lowwinter temperatures are moderated by extra cloud cover and ocean winds. This results in a longer, cooler ripening period; retaining higher natural acidity while allowing tannin ripeness in the seeds and skins. This wine is pale straw in color and has aromas of freshly cut lime, nectarine, and peach. On the palate the complex minerality creates great length and textural finish with lingering nuttiness.

Located in the Padthaway Valley which is comprised of rich Terra Rosa soils. The estate vineyard benefits from excellent sun exposure producing grapes of optimum flavour, colour and tannin development. This wine is a light yellowwith a pale straw hue and has a classic nose of lemon, fresh stone fruit and melon. The palate is clean and fresh with mineral characters under- pinning ripe pineapple and lime flavours. Think outside the box and pair this wine with some fresh avocado and tuna tapas.

Jacobs Creek has a rich history beginning all the way back in 1837 when Bavarian-born Johan Gramp arrived at Reeves Point on Kangaroo Island. He missed the taste of wine from his homeland so much that he decided to start growing grapes. This wine features a stimulating bouquet of grapefruit and tropical fruits with a backdrop of fresh cut beans. It is teeming with sweet tropical and grapefruit flavours with a crisp and perfectly balanced finish. A fantastic seafood wine, try this one with lobster caprese skewers.

The Ancient Vines Mourvèdre is sourced from some of the winery’s oldest, most historic and shyest-bearing vineyards. These blocks produce fruit of stunning concentration. Fermentation occurred in stainless steel tanks with select cultured yeasts. Ancient Vines has distinct chocolate characteristics and a luscious deep plum flavor. This delightful wine goes exceptionally well with grilled lamb or pork, sautéed asparagus and curried deviled eggs.

John Glaetzer is a multiple award winner in the wine making industry. After working with Wolfblass he decided to venture out on his own and John’s Blend was the result. John’s Blend is very deep rich and intense red. On the nose it displays intense eucalyptus with complex oak lift. Margarete’s Shiraz is rich and full bodied, showing classic Langhorne Creek character of chocolate and dark fruits. While full bodied, the palate is balanced with French oak backing with a soft finish. Charcuterie is a must, depths of flavors are achieved in mixing this wine with different meats and cheeses.

The Hunter Valley is renowned as one of the best regions for Semillion in the world. This is a light wine when young with notes of gooseberry and lime. It has a clean fresh finish, it takes on a golden color after some bottle ageing and develops into a classic Hunter style with delicious honey and toast characters. This wine pairs well with a light spinach salad.

This wine pairs well with braised meats as well as mushroom based dishes.
