VERMOUTH / AROMATIZED WINE

Fortified Wine has had distilled spirit added to increase ABV and preserve it. Port, Sherry, and Madeira are the most common examples. Aromatized wine is fortified wine that has been infused with herbs and botanicals. Most aromatized wines have a prominent bitter element to balance their natural sweetness.

DOLIN FRANCE Vermouth de Chambéry

France’s only Appellation d’Origine Vermouth, Dolin is the last remaining producer of Vermouth de Chambéry AOC. Made from fine wine and botanicals found in the Alpine meadows above Chambéry. Sweetness comes from natural grape sugars - musts are blended with neutral spirit to prematurely halt fermentation. Enjoy chilled or with a splash of tonic. Quinine bitterness grows gradually on the palate, rich grape juice offsets complex herbs along with zesty lemon, white pepper, and lemongrass. Wormwood is the backbone botanical for vermouth. Even the name “vermouth” is derived from the “wermut” infused German wines that came before it. Cinchona bark is the source of quinine, which most people are used to as a flavor component in their tonic water. Aromatized wines with quinine are commonly known as quinquina or chinato. Gentian root or flower is most commonly seen in Americano style aromatized wines. It’s also used commonly in many aperitivo liqueurs.
