Absinthe Verte 130PF / 750ML Created following the traditions of 19th Century European master distillers, this is a clean, straightforward and refreshing absinthe: pale straw yellow-green liquid with a wallop of licorice aroma and flavor and medium body. Indigenous Obeidi grapes are fermented for two weeks, then double distilled in traditional Moorish lid copper stills over vine wood embers. On the third distillation, it is macerated with organic green aniseed from the Syrian slopes of Mount Hermon, imparting distinctive aroma and flavor. It is then aged in traditional clay amphorae for two years, lending a subtle color and a notable maturity. Serve with two parts cold water. MUSAR, CHÂTEAU LEBANON, BEKAA VALLEY Chateau Musar was the first producer in Lebanon to achieve organic certification for its vineyards in 2006. Most are located in the Bekaa Valley, cradled between two mountain ranges running parallel to Lebanon’s Mediterranean coastline. From the storied Lebanese Château Musar, L’Arack de Musar is made from grape alcohol with an average age of five years. Uniquely distilled four times with the addition of anise seeds during the 4th distillation, followed by one year of aging in terracotta amphora’s which contribute to its liquorice aromas. The history of absinthe is a cocktail of myth, conjecture and controversy. A turn-of-the-twentieth century favorite of artists and writers, the spirit was banned in the United States in 1912 because it was believed to be hallucinogenic. Just a few years ago, it once again became legal in America to buy the high alcohol, anise-flavored liquor. The term “absinthe” comes from Artemisia absinthium, the scientific name for its key ingredient, wormwood. Long before distillers discovered it, the herb was used for medicinal purposes. The production of absinthe is much like that of gin: High-proof neutral spirit is infused with a blend of botanicals, including wormwood, and redistilled. Traditionally, the alcohol is infused a second time before bottling to intensify the flavor and create the signature green color. Many modern producers skip this final step and use dyes instead. DON AMADO MEXICO In the highlands of southern Mexico, the renowned Arellanes family has been crafting one of the regions most celebrated mezcals since the late 1700’s. Eleven generations of continual mezcal distillation with a legendary commitment to craftsmanship and experimentation have culminated in a spirit that is simultaneously complex and approachable. Don Amado is made from earthen roasted agave hears which are, after crushing, fermented together with their pina fibers for a rich agave character. The mash is then double-distilled in small traditional ceramic clay pots. Aged varieties are matured in American oak casks previously used for barreling Domecq brandy. PELOTON DE LA MUERTE OAXACA, MEXICO Produced by Master Mezcalero Cutberto Santiago in the village of Santiago Matatlán in Oaxaca. Peloton de la Muerte Mezcal 92PF / 1.0L Pelotón De la Muerte is made from 100% agave espadín cooked in a pit oven covered with volcanic rocks. The juices from the cooked piñas are pressed using a traditional tahona, then fermented in wooden vats before being double-distilled in copper pot stills. Pelotón de la Muerte means “brigade of death” and the label depicts the flag used by insurgents during the Mexican Revolution. A spectacular spirit at an even more spectacular value, this mezcal shines in cocktails. Minerality and flavors from notes of wild grass to an underlying woody richness, the company reports. This tequila is aged more than 3 years in American and French oak, during which time it gains a dark color and the sweet aroma of nuts and chocolate. Its extraordinary palate is a perfect pairing for an after-dinner cigar.

This expression recreates a once popular style of high end blanco tequilas, where lower brix, less stressed agave from the nutrient rich Tequila Valley predominated. The top end of these tequilas were barrel conditioned for 35 to 40 days, just enough to soften the lowland peppery vigor. This Historic tequila is barrel condition for 35 days in Pedro Domecq brandy casks that previously held Don Amado Reposado Mezcal.

ArteNOM Seleccion de 1579 Blanco 81.4PF / 750ML

Using tequila’s highest altitude agave from 6,079’, Felipe Camarena crafts this bright, aromatic tequila from stressed hillside agave, slowly roasted in brick ovens, macerated intact with fiber for a pronounced flavor, and distilled with rainwater.

FUENTESECA MEXICO Special Release Tequilas The Fuenteseca Reserva Extra Añejo Tequilas include the oldest bottled tequilas in the history of the tequila business. They exemplify barrel aging mastery by using assorted wood types, storage conditions, altitudes and microclimates to mature nuanced spirits. These historical selections are made available to us by Enrique Fonseca, who began storing these legendary distillates twenty-five years ago and now periodically releases them when determined to be optimal. The newest edition, Cosecha, is 3 year rested blanco. The Fuenteseca Tequilas are also the first commercially available tequila products authorized by the CRT to carry both an agave harvest This 2018 Cosecha bottling is made from over-ripe Highland pinto Blue Weber agave grown at 5,019’ elevation in the rugged, extremely mineral-laden CALICHE soil of Vista Hermosa, Micohoacan, the southernmost region within the D.O. This area’s calcium carbonate suffused, mineral-rich terroir is evident in Tequila Fuenteseca Cosecha 2018’s fantastically- heightened minerality that beautifully accents the pure agave flavors of sweet, cooked yams and warm baking spices. Fuenteseca Reserva Añejo 7yr 84PF / 750ML Enrique Fonseca distilled this expression in early Spring of 2010, with three-quarters of the bottling made in a double-copper column still with removed plates to achieve a lower distillation proof, and the remaining quarter made in an alembic pot still. Half of the run was then stored in American white oak previously used to age California red wine, and the remaining half barreled. Fuenteseca Reserva Añejo 8yr 86PF / 750ML Master Distiller Enrique Fonseca distilled this selection in late Spring of 2008, with three-quarters of the expression made in a double-copper column still with plates removed to achieve a lower distillation proof, and the remaining quarter made in an alembic pot still. One-quarter of the distillate was then laid in American white oak previously used to age California red wine, and three-quarters was aged in used dark French oak. The casks were stored for the full 8 years in a damp-climate cellar used in the early 1900s as a water cistern, to slowly settle the spirit in a colder environment with reduced wood interaction. Fuenteseca Reserva Añejo 11yr 83.4 PF / 750ML Distilled in late winter of 2006 with two-thirds of the expression made in a double-copper column still with plates removed to achieve a vintage date as well as a barrel aging statement. Fuenteseca Cosecha Blanco 2018 89.6PF / 750ML

lower distillation proof and the remaining third made in an alembic pot still. One third of this lot was then laid into in American white oak previously used to age California red wine, and the remaining two-thirds was barreled in used dark French oak. The casks were then rested for the full 11 years at 3,800’ elevation in a cool-climate subterranean barrel room, with the upper-most portion of the room opened to allow for soft air circulation in order to create a drier aging environment. Fuenteseca Reserva Añejo 15yr 86PF / 750ML The highland agave used in this lot were harvested in Atotonilco in the Spring of 1998. The distillate was aged 15 years in a dry, earthen floor aging room where a delightful faint sweetness was achieved by aging nearly all in American white oak, with only 3% laid into French oak. 75% of the white oak casks previously held Bourbon and the remaining 25% were California red wine casks and one Chardonnay cask. Fuenteseca Reserva Anjeo 18yr 87PF / 750ML Produced in September 1995, 75% of this lot was distilled in copper double-column stills and 25% distilled in copper alembic stills. Aging began in Canadian white oak casks previously used to age rye whiskey and stored at 4,600’ for six years. The tequilas were then blended and re-barreled, with half left to rest in Canadian white oak rye casks and half moved to European dark oak barrels previously used to age California red wine. The refilled casks were then moved to a cooler, breezier climate, and left to age for an additional twelve years. Fuenteseca Reserva Añejo 21yr 87PF / 750ML This lot was distilled in copper double-column stills from mostly 1984 plantings harvested in late 1993 and laid into barrel in early 1994. The casks were stored 10 years in a dry, earthen-floor room in Atotonilco el Alto, before being moved to a higher, cooler climate on the slope above the highland town, where they remained for 11 more years. Nearly all of the barrels were previously used for aging California white wine, with one barrel having been used for aging Canadian rye whiskey. “ ...the oldest bottled tequilas in the history of the tequila business. In keeping with Casa Xalixco’s house preference, they are barreled in French oak casks. Purasangre Tequila Reposado 80PF / 750ML Aged 10 months in French Oak. Distilled by Master Tequilero Felipe Camarena at his innovative El Pandillo Distillery. G4=Fourth-generation tequila producers. Located in the village of Jesus Maria, roughly 7000’ elevation, in the Los Altos region of Jalisco. 100% estate grown Blue Weber agaves, grown for 6-8 years in mineral-rich, red clay soil fields adjacent to his distillery. Roasted for 22 hours in masonry ovens, split by an axe, then slowly crushed by “Felipestein”, his mechanical tahona roller, custom built by Felipe from recycled parts. Poli Distillerie Ciliegie 80PF / 750ML A clear fruit brandy made from white Durona cherries in the Marostics Hills in the Veneto. Aromatic with notes of cherry blossom and almonds and smooth on the palate. The fruit was fermented in stainless steel tanks before distillation, then aged for at least six months in stainless steel. Poli Distillerie Lamponi 80PF / 750ML A clear brandy with aromas of wild red raspberries from the mountains of Friuli-Venezia-Giulia. On the palate, it is warming, full-bodied and sensual with a smooth finish.
