Combi Oven Playbook

3.2 Utility Requirements Note: All utility work must be completed prior to combi oven installation  3.2.1 Water A. Two water connections to the Combi Oven are required  a. Fine filtered water for cleaning (frommultiplex)  i. ½” ID line with ¾” GHT connection to the oven  b. Blended RO for cooking 

i. 1/4” ID line with ¾” GHT connection to the oven  ii. Water quality recommendations for Combi cooking  1. TDS: 50‐125 ppm  2. Total Alkalinity: 50‐100 ppm  3. Hardness: 50‐100 ppm  4. Silica: < 13 ppm 

5. Chloride: < 25 ppm  6. Chlorine: < 0.1 ppm  7. pH Factor: 7.0‐8.5 

c. Water pressure regulators with gauges should be installed for each water line routed to the oven. The regulators  should be located at or within 10’ of the oven, so that the gauges are within visible sight for service purposes.  i. Recommended water pressure regulator and gauge from Coke parts:  Regulator, Coca‐Cola part # 135008  Gauge, Coca‐Cola part # 10772

ii. See Appendix 7.2.1 for the full list of recommended Coke parts  iii. Water pressure ranges and regulator set points are the same for both cleaning and cooking water: 

1. Manitowoc Convotherm pressure range is 35 – 80 psi; set point is 50 psi  2. Blodgett pressure range is 40 – 50 psi; regulator set point is 50 psi 

d. Water schematic is located in the Appendix Section 7.2 e. Above water lines to be prepared and installed by an approved beverage installer 

i. Water lines can be prepared from back‐of‐house ahead of equipment arrival and installation. Run or drop  prepared water lines through vertical wall‐mounted chase provided by the KES. Final connections of water  lines to the back of the oven once the oven is mounted to the table. 

3.2.2 Plumbing

A. Drain line from oven to a drain that goes to a grease interceptor:  a. 1.5” diameter tube with 1” minimum floor gap 

b. Drain pipe (CPVC or equivalent) material must be able to withstand 140 degrees F  c. Drain line should not be reduced 

d. Gravity flow that must be free vented  e. Maximum length is 12 feet with 3 elbows  f. Do not install an oven directly over a floor drain (condensation and steam will drift up into controls).  *  Drains to grease interceptor, which are typically the following:  a) Mop sink drain  b) 3‐compartment sink drain  c) Veggie sink  **  Drains that typically do NOT go to the grease interceptor:  a) Hand sink drain
