Combi Oven Playbook

Note: Refrigerator support is usually upright refrigerator at end of prep line. Freezer support can usually be achieved through  utilization of the worktop freezer next to Filet/Chicken fryer. Wall freezers are used to support Filet/Chicken fryers. Floor drain  connection would be a longer more costly run. 

(D) Location – DT kitchen wall toward rear of store  (example 3486 / 4379) Pros  1. Works well for the 1‐2 hours a day where the cell may require dedicated staffing (high volume breakfast hours)  Cons  1. Far away from other cooking equipment  2. Travel distance too long for cooking crew, the majority of the hours a day, when the Combi cell would not require dedicated  staffing (limits productivity benefit)  3. Far from UHCs  Look at your current biscuit oven location as you consider your combi oven location. In some restaurants, you may need  approximately 18” to 23” additional for the combi oven and table.  Note: Refrigeration support is usually the salad prep station refrigerator or upright refrigerator at the end of the prep line. Freezer  support is usually the upright freezer by fry dispenser. Floor drain connection usually from the vegetable sink drain or the ice  machine drain.  *Diagram of the refrigeration and freezer support options is located in  Section 7.3 of the Appendix.
