5.2 Combi Oven Ordering Process Step 1: Combi Oven ordering will follow the standard equipment ordering process, whereby Owner Operators will place orders directly  with their KES for equipment and installation services.   Step 2: The installation process begins here. (Proceed to Step 3 of the installation option selected)  If the Owner Operator selects a Self‐Installation then the process is as follows: Step 3: Owner Operator researches and verifies any and all permit inspection requirements with the local municipality,  prepares permit documentation and identifies the required Combi equipment.  Step 4: Owner Operator applies for any required permits.  Step 5: Owner Operator places an equipment order with the KES.  (Please review the installation guidelines in the next  section before placing the equipment order) Step 6: Owner Operator coordinates the completion of all utility work (electrical, drain, and plumbing) and requests a  Combi Oven start‐up service with the oven manufacturer.  Step 7: Owner Operator coordinates the installation of Combi equipment (table, oven, hood, etc.)  Step 8: Combi Oven manufacturer (Blodgett or Convotherm) completes the oven startup service and training.  Step 9: Owner Operator completes restaurant crew training using the provided training materials.  If the Owner Operator selects a Self‐Installation with KES survey then the process is as follows: Step 3: KES conducts a site survey and creates an initial kitchen drawing for approval (revisions maybe required). KES  finalizes the kitchen drawing, identifies the required Combi equipment, prepares an equipment quote and submits for  operator approval.  Step 4: Owner Operator researches and verifies all permit inspection requirements with the local municipality, prepares  permit documentation, and applies for required permits.  Step 5: Owner Operator places an equipment order with the KES .  (Please review the installation guidelines in the next  section before placing the equipment order) Step 6: Owner Operator coordinates the completion of all utility work (electrical, drain, and plumbing) and requests a  Combi Oven start‐up service with the Oven supplier.  Step 8: Owner Operator coordinates the installation of Combi equipment (table, oven, hood, etc.).  Step 9: Combi Oven manufacturer (Blodgett or Convotherm) completes the oven startup service and training.  Step 10: Owner Operator completes restaurant crew training using the provided training materials.  If the Owner Operator selects a Managed Installation then the process is as follows: Step 3: KES conducts a site survey and creates an initial kitchen drawing for approval (revisions maybe required). KES  finalizes the kitchen drawing, identifies the required Combi equipment, prepares an equipment quote and submits for  operator approval.  Step 4: Owner Operator researches and verifies all permit inspection requirements with the local municipality, prepares  permit documentation, and applies for required permits.  Step 6: KES prepares service quote and submits to the Owner Operator for approval.
