Combi Oven Playbook

C. Upper portion of new Combi Table is removable for restaurants with smaller back‐door openings.  D. Note: Combi Oven Electrical Utility Kit mentioned above may (upon request) be shipped early to the GC, electrician or  restaurant itself to help prepare for electrical work ahead of equipment arrival and installation.  For other  arrangements, please work directly with your KES. 

X. Equipment Installation:  A. Combi Oven Table:  1.

Uncrate and peel all protective plastic from table surfaces and parts.  2. Verify location in kitchen for new Combi Station.  3. Floor and wall areas should be open and free of any restrictions for new table.  4. Two (2) persons required to lift and move Combi Table.  5.

Temporarily locate table itself in final layout position. Set table against kitchen wall, adjust and level table to  34.5” high above floor to top of main working surface. Check for level on table in both directions (left‐right &  front‐back). As a reference, the upper Combi Oven deck (where Combi mount to table) should also be at 43”  high above the floor.  6. Pull table away from the wall.  B. Combi Ovens:  1. Two (2) persons required to lift, move and install Combi Ovens on new table. Caution: Combi Ovens are very  heavy; based on oven type in excess of 300 lbs.  2. Based on kitchen layout determine if Combi Oven will be located at the left or right side of new table. Locate  open mounting holes for oven at center of table and upper deck area. Two sets of mounting holes provided;  one each for Convotherm and Blodgett type ovens.  a) Two sets of mounting holes are provided at the front & back of the table deck area; one set each for  Convotherm and Blodgett type ovens  b) The front most and larger set of holes are for Convotherm oven mounting and the rear most &  smaller set of holes are for Blodgett oven mounting.  3. Carefully lift and position Combi oven to top of upper deck area on table.  4. Locate mounting holes from underneath the upper deck area and align with threaded mounting holes in  bottom of oven. Use loose bolts provided with new table to secure oven to table at center of station only.  Two (2) mounting bolts are required; RH bolts for LH Combi unit at center of station and LH bolts for a RH  Combi unit at center of station. Both Convotherm and Blodgett style mounting bolts are provided with each  table’s accessory kit.  5. Tighten all bolts to secure oven to table.  C. Ventless Hoods:  1. Blodgett Combi Oven – this equipment already has the Hoodini Ventless unit integrated as part of the overall  unit and will be installed on the table at one time as an all‐in‐one unit.  2. Convotherm Combi Oven – Two options exist ‐ (1) This equipment can have a separate Halton Ventless unit to  be installed on top of the oven once the oven is installed on the Combi Table. Note: Once the Halton unit is  mounted, this oven plugs into the Giles unit and the Giles unit then plugs into the main power source and   electrical outlet. (2) This equipment can have a separate Convotherm COV Ventless unit to be installed on top  of the oven once the oven is installed on the Combi Table. Note: Once the Convotherm COV unit is mounted,  this hood plugs into a 120V electrical outlet and a communication cable is attached from the rear of the   Combi oven.  3. If fire protection is required for this hood, a special Giles Fire‐Kit with this hood is available thru the KES. In  this case, a separate and remote Fire Protection System (Ansul) will also be required for hook‐up to this  ventless hood.  Now that Combi Oven is mounted to table and with table away from kitchen wall, prepare for connections at  back of table (Cleaning solutions, Water supply & Plumbing drains)  2. Connect both cleaning solution hoses to appropriate ports at back of oven.  3. Connect both water supply lines to appropriate threaded fittings at back of oven. D. Utility Connections:  1.
