Combi Oven Playbook

4. For Blodgett Ovens only connect stainless‐steel drain‐box to main drain‐port at back of oven. Note: From  rear of the unit the drain‐outlet from this drain‐box should point to “the right” in opposite direction from  other connections mentioned above. Connect additional cream‐colored small drain‐hose from back of oven  (port) also to this same Drain‐box. Tighten all connections. See Oven owner’s manual for additional  information.  5. Plumber to connect PVC drain‐line to back of oven or from outlet of drain‐box on Blodgett ovens in direction  of final drain‐line away from station.  6. Plumber to prepare and plumb all drain‐line work within limits of table footprint.  7. Tighten all connections and check for any leaks.  8. Once all plumbing and hoses are connected the combi oven table can now be shifted to its final position in  kitchen and against the wall; take caution while shifting table & oven.  9. Plumber can now perform final PVC connections to prepared drain run to floor‐sink/drain.  10. Ovens and ventless units can be plugged in to electrical service.  E. Additional Equipment at Combi Station:  1. Install vertical Utensil Holder next to Combi Oven at center of table (see instructions sent with table)  2. Install/position Qing Oven on shelf area of deck next to Utensil Holder. Plug Qing Oven into outlet.  3. Install Wire‐form, Utensil, Paper liner and Packaging Holder parts into underside of upper deck area.  4. Install vertical Tray Holder (clips in) to underside of main work surface of table. Note: This part can be shifted  to the left or right side of the table based on kitchen layout.  5. Install Biscuit Oven in remaining space below Combi Table. Plug Oven into outlet.  F. Cleaning Products:  6.  All restaurants should order cleaning products before install of a Combi Oven. Please see the Appendix  Section 7.6  for Combi cleaning instructions and cleaning products available.
