6 Frequently Asked Questions

Can I stack a Combi Oven on top of an existing Convection Oven? No, you can NOT directly place a Combi Oven on a Convection Oven due to air vents beneath the Combi and overall instability. A  fabricated table is required to utilize this configuration, which also provides work space for the crew and storage space for the  necessary smallwares.  What type of water is supplied to the steam water inlet? RO water is required for the steam water inlet to minimize lime scale buildup in the Combi Oven. However, if your restaurant does  not have an RO system because the incoming water is low in Total Dissolved Solids (TDS), an RO system does not need to be added.   The steam water inlet should use the same water that is being supplied to the Espresso machine in the restaurant.  Can I run the Combi Oven drain to a hand sink or ice machine drain? No, the Combi Oven drain should be connected to the grease interceptor system for the restaurant. Hand sinks and ice machine  drains do not connect to the grease interceptor.  Am I required to install a Combi Oven with an ANSUL system? No. While a hood is required over the Combi Oven (ventless or vented) an ANSUL system is only required if the local regulation  requires it (this is rare). The Giles ventless hood designed for the Convotherm Combi does have that factory option whenever  needed and a field conversion kit is in process. 

Can I can reverse the way the door opens in the field? The Blodgett Combi Oven does allow the door hinge to be reversed upon request when ordering from the manufacturer.  The  Convotherm Combi Oven cannot have this done in the field; however, it can be ordered either right or left hinged. 

Can I cook ALL McDonald’s protein products in a Combi Oven? Only those products that McDonald’s has officially determined can be produced in the Combi Oven can be cooked in the  oven. Currently, those products include bacon, folded eggs, round eggs a n d grilled chicken. 

Does a Combi Oven require a Start‐Up visit? Yes, a Start‐Up visit is required for Combi Ovens just like many other pieces of kitchen equipment. This is included in the purchase  price. For the Convotherm Oven, contact the Manitowoc RISE Center to schedule the prepaid service call  (rise.callcenter@mtwfs.com / 844.724.2273 Option 4, Option 4). For the Blodgett Oven, contact 847.481.6675 for assistance on  scheduling a start‐up.
