1 FRANCE A grand dame re-opens

L’Espadon at Ritz Paris finally reopens in December, headed by chef Nicolas Sale who has four Michelin stars under his belt. The menu has yet to be unveiled but Elite Traveler hears he is planning "substantial changes". ritzparis.com

2 NETHERLANDS Three experimental banquets

Two Michelin-star chef Edwin Vinke is hosting three unique banquets at the Lloyd Hotel & Cultural Embassy in Amsterdam for 40 guests. The menu is entirely plant based. October 9, 10 and 11. steinbeisser.org

3 ENGLAND An exquisite wine-pairing

The 17th century wine estate Château Margaux in Bordeaux has reopened after a major architectural revamp by Lord Norman Foster's company Foster + Partners. The ancient orangery, the oldest structure on the 650-acre estate, has been refurbished and a winery, Nouveau Chai has also been built – the first new structure to be built on the site in 200 years. When you’re there, stop by the estate’s impressive wine cellar where the humidity level sits around 80% to prevent the corks from drying out. Call ahead to arrange a private tour and wine tasting session. Or better yet, the château manager Giles Jourdan and his wife Catherine have been known to prepare wine-paired suppers for select guests. chateau-margaux.com

Christie's hosts a Fine Burgundy-themed dinner on November 5, attended by the auction house's wine specialists. Rare and fine wines will be served, including Clos Saint-Denis, Dujac 1985. $2,000 a head. christies.com

4 MONACO A colorful pop-up cafe

Pantone, the company behind the popular color-matching system, has opened a pop-up cafe in Monaco. All menu items come with their own unique color code (a pistachio éclair is Pantone 19-1625). Open until September 9. pantone-cafe.com
