New Island Businesses: Ebb & Thyme Bakery

Ebb & Thyme Bakery is the newest eatery on the island. Nestled within the Slow Bell Cafe, it is open Wednesday through Sunday from 8:00 a.m. to 2:30 p.m. There are sunny tables on the deck as well as seating inside, but there is no table service. Everything but the bread is made from scratch, which means that owner Christine Englund is in the kitchen by 5:30 a.m. roasting the meats for the day’s sandwiches, making the sauces, and whipping up the premade entrees and sweets. A trained pastry chef, Englund considers her signature dish to be her white chocolate raspberry tart, although customers would be hard pressed to choose among their own favorite desserts, such as flourless chocolate cake, lemon–thyme poppy seed cakes with a lemon drizzle, and dark chocolate mint brownies. Breakfast options include muffins and croissants every day, with heartier fare such as strata also available on weekends. Englund usually has a mouthwatering chowder or soup for lunch, and her sandwiches are definitely meant to be eaten with two hands—or maybe even two people. Try the pulled pork or BLT—or both. Later in the summer she hopes to offer marinated meats for you to cook at home. It’s almost like having a butcher shop on the island. The menu changes daily, and the bakery has no phone number, meaning that if you want to pick up lunch or something for later on, you must stop by. And once you do, you will probably want a flaky lemon pastry or enormous cookie for the long ride home.
