Food and Beverage Training Manual

Setting up

While you are arriving at the member's house your captain will tell the hosting member that you are here and that you are going to set up.

The senior trainee will show you exactly where you will start to set up the different stations like e.g. the bar, tables and chairs, buffets, break down station or the kitchen equipment. The last two mentioned things are usually set up in the garage of the house. Make sure that especially this area is kept clean. Always give our members the feeling that nothing can go wrong at any time. Make sure they know that their event is something special and that you are a professional. So there is no need for them to worry. Approximately one hour before the party is going to begin you will have a final line up. You will get information about your job assignment. Either you are e.g., passing drinks, hot or cold hors d'Ĺ“uvres or if you are bar tending in the beginning and what tables will be yours till the end of the event.

After that you are going to start preparing the buffets, getting the drinks ready or checking the table set up again.

Make sure that your surrounding and the member's house is always as clean as possible and keep yourself organized at all times.

Service guidelines

As soon as the hosting members and their guests are taking their places at the tables it will be your responsibility to take care of your assigned tables. Make sure they all have ice water, drinks and clear the dirty plates. Bring all the dirty plates, glasses and silverware to the breakdown station. Keep this area as clean as possible so it will be easier for you later on. As soon as you are recognizing that the guests are getting their dessert, take out the bread basket, butter dishes and salt and pepper, also make sure that you have enough sugar caddies and creamers at your tables and offer them coffee or tea. Never let it happen that the members or one of their guests is waving for you. Always practice table maintenance.

Always keep in mind that it is your responsibility to keep our members and their guests happy.
