Here’s a spin on a classic cocktail named ‘white lady’ created pre-prohibition. It’s white as a swan and so good it’ll have you swimming with cheer.

SEVEN SWANS A SWIMMING

COCKTAIL • 2 oz. Roxor Gin • ½ oz. lemon juice ( about half a lemon ) • ½ oz. rosemary simple syrup • ½ oz. Cointreau • 1 egg white • rosemary sprig, for garnish Add gin, lemon juice, simple syrup, Cointreau and egg white to a cocktail shaker. Do not add ice. Dry shake vigorously for about 30 seconds. Add ice and shake an additional 15 to 20 seconds to chill drink. Strain into martini or coupe glass and garnish with a sprig of fresh rosemary.

ROSEMARY SIMPLE SYRUP

• ½ cup water • ½ cup sugar • 2 sprigs of fresh rosemary Add water and sugar to a saucepan. Bring to a boil and mix until sugar is dissolved. Add in the rosemary sprigs, remove from heat and allow to steep 30 minutes. Cool to room temperature and remove rosemary. Chill.

ULTIMATE EGGNOG

DIRECTIONS Combine milk, cloves, 1 teaspoon vanilla, and cinnamon in a saucepan. Heat over low setting for 5 minutes and slowly bring to a boil. Combine egg yolks and sugar in a large bowl and whisk until fluffy. Whisk hot milk mixture slowly into the fluffy egg and sugar mixture. Transfer combined mixture to a saucepan and cook over medium heat, stirring constantly until thickened. Do not allow mixture to boil. Strain to remove cloves. Let cool for about an hour. Stir in rum, cream, 2 teaspoons vanilla and nutmeg. Refrigerate overnight before serving.
