Women learn to sail at Gosford Sailing Club G osford Sailing Club has been offering beginners and experts alike since 1932 the opportunity to connect with the gorgeous aquatic surroundings throughout Brisbane Water. Traditionally, sailing has long been seen as a luxury in a sport dominated by men, however, as recent sailor Minkang Sankey says, sailing has become increasingly accessible and open to women. My husband encouraged me for a long-time to sail, and I had no experience at all before joining the Gosford Sailing Club’s Adult Learn to Sail program in October 2021. “Among water sports, sailing is seen as something richer people do, yet I have found that the sailing club is open to anyone regardless of experience and background.

Over the summer season which goes from November to March, the club offers an open class every Wednesday afternoon for people to get on the boats and experience the water. “I have rediscovered myself. I had no prior knowledge and I have found that sailing suits my personality as well as being a great opportunity to engage with nature and to meet wonderful people who are always willing to help and care for each other and to meet the demanding challenges involved in sailing. “Particularly for women, engagement with the water is very important for mental health and wellbeing which is very important after the impacts of COVID-19 saw many women get caught up in family responsibilities and duties.” Member for Gosford, Liesl Tesch, who won Paralympic gold medals sailing in Rio and London, is encouraged by the increase in popularity for sailing by local women. “At every level, from beginner to elite, sailing is like a meditation. Passionate about her role as an environmental campaigner and educator, Ms Wriley has launched ‘Earthcare’– a board game that aims to teach as much as it aims to entertain. “It looks like a Monopoly board game in terms of format, though it is really about exploring ways to care for the Earth, conserve resources, and to connect with nature. I started making the game a couple of years ago based on a New Zealand board game called ‘Conservation’. I have updated and re-invented it in ‘Earthcare’ – with the creator’s permission of course!” “The beauty is that it can be played competitively or collaboratively to see what choices can be made to score the highest points.” Member for Gosford, Liesl Tesch, is excited to try out the game herself, acknowledging the important message behind it as an educational tool and congratulates Ms Wriley on her efforts to raise awareness about an important issue through a way that is as fun as it is informative. Tofu with Orange and Ginger

Method 1. Dry the tofu between paper towels, then cut into cubes and roll in cornflour and mix to coat. 2. Heat half the olive oil in a large frypan then add the tofu and fry until crispy and golden. Set aside to drain on paper towel. 3. Heat a large wok with remaining olive oil and the sesame oil. Add ginger, garlic and chilli and fry for one minute. Add pak choy and cook for a further 5 minutes or until wilted. Add soy and orange juice, along with

Salmon and Spinach parcel

Method: 1. Preheat the oven to 220°C, fan 200°C. Put the salmon on a sheet of baking paper. Season, drizzle over 1 tbsp oil and wrap to seal. Roast on a baking tray for 12-15 mins until just cooked through. Once cool, flake and set aside. 2. In a pan over a medium heat, add 2 tbsp oil and fry the shallots for 5 mins. Add the garlic and cook for 1 min. Add most of the spinach, stirring until wilted. Stir in the soft cheese and dill. 3. Line a baking tray with baking paper and put the pastry on top. Slice a 2.5cm long strip off the shortest side and set aside. Spoon the spinach onto one side of the pastry, leaving a 2.5cm gap at the edge. Top with the fish and drizzle with a little lemon juice. 4. Fold the unfilled side of pastry over the fish and seal the edges. Crimp the edges and prick the top with a fork. Shape fish from the reserved pastry and stick on top, brush with egg. Bake for 20-25 mins.

Consider your next floor “style” as your guide T hey say about buying a property that “Location” is key. THE EXPERT ask The Inside Story on Gut Health

I t’s no secret that the human gut influences every aspect of our health. It regulates sleep, energy levels, mental health, the immune system and of course is crucial for digestion. A growing body of evidence further strengthens the widespread belief that a healthy gut is the key to maintaining a strong heart, mental health and even as a protection against certain Cancers. Not surprisingly questions around gut health abound, mostly concerning Prebiotics and Probiotics…time to bring extra clarity to this intriguing important subject. Whilst these amazing Nutraceuticals, fermented foods & supplements are undoubtedly relevant & crucial as part of a sustainable healthy lifestyle, some experts are now weighing in on what really constitutes a healthy gut. There’s often a story behind the story. In this case a side that’s been for the most part kept in the shadows, and certainly not given the prominence it deserves in the community at large…needs to be told. “Think of what you know about gut or digestive health,” challenges author Mark Porter in his new book Gut Health – The Inside Story . “Whether you are a consumer or health professional your immediate thoughts will run along certain well-worn lines of reasoning: diet; saturated fats; probiotics; vegan or paleo recipes.” But there is much more to this story. Porter continues… “There is one subject that is rarely broached, and when raised it is typically treated with disgust and dismissal by professionals and the public alike. It remains the most under recognised health threat of the modern age, particularly in wealthy countries.” So just what is this shadowy subject that we seemingly prefer to ignore rather than confront? “I find parasites in 92% of people.” stated Cancer Specialist Dr. William Kelley. He didn’t hold back about where he found them either… “Everybody – rich and poor – the whole population have parasites.” He’s not alone. Dr. Bernard Barber, a noted Australian doctor who spent his career studying gut health added: “Well over 80% of patients we check have some type of parasite or bacteria and the slight inflammation of the abdomen and unrelated pains and aches which indicate the presence of parasites.” But hang on I hear many saying…aren’t parasites only meant to inhabit poor developing countries with inadequate sanitation? If you accept current mainstream dogma, you will almost surely think so. “There are lots of ways of catching giardiasis, such as … drinking water that’s not been

treated to kill germs (usually while travelling in developing countries).” So claims the UK’s National Health Service website. What this official source fails to admit is that over 50,000 Britons contract this parasite from the United Kingdom’s own domestic water supply every year. “Blastocystis hominis is a common intestinal parasites found in humans living in poor sanitary conditions, living in tropical and subtropical climates, exposed to infected animals, or consuming contaminated food or water.” That’s right folks, we’re safe here! According to this peer reviewed article in the American Journal of Tropical Medicine and Hygeine, you contract Blasto, responsible for IBS-type symptoms & more from visiting countries with “poor sanitary conditions” in “dirty countries” and via coming into contact with “contaminated food or water” (or raw sewerage). This isn’t factual, though. According to the Australian Journal of Medical Science, there is a prevalence of anywhere up to 50% worldwide for this organism. That means up to 1 in every 2 people anywhere in the world have Blasto. Authorities also estimate that the worldwide percentage for Helicobacter pylori , another parasite that causes stomach ulcers as well as approx 10% of stomach Cancer, is also in around 50% of all people. Hence these bugs are not so exotic or rare after all and patients who have never travelled outside of Australia present with symptoms which are confirmed via multiple stool tests to in fact be Blasto...so there really shouldn’t be any related conjecture. A regularly asked question is how common are parasites where we live? To understand this issue we need to grasp the definition of the term “parasite” and all that it embraces. According to the Center for Disease Control, “a parasite is an organism that lives on or in a host organism and gets its food from or at the espense of its host.” This very broad definition can cover almost any form of unhealthy organism. In other words, if it lives on you or in you and doesn’t help you…then it is a parasite. Further complicating things, parasites are often opportunistic as well. Medical author Dr William C. Schiel Jr describes opportunistic organisms as parasites “that can lie dormant in body tissues for many years…but cause no symptoms of illness. When the immune system cannot raise an adequate response [e.g. when compromised by another parasite infection] , these microorganisms are activated, begin to multiply and soon overwhelm the body’s weakened defenses.” Parasites are everywhere –in our water, our food, even on the grass on which we walk. I nflammation refers to your body’s process of fighting against things that harm it, like infections, injuries, and toxins, in an attempt to heal itself. When something damages your cells, your body releases chemicals that trigger a response from your immune system. Acute inflammation often causes noticeable symptoms, like pain, redness, or swelling. But Chronic inflammation symptoms are usually much more subtle. This makes them easy to overlook. When you’re living with chronic inflammation, your body’s inflammatory response can eventually start damaging healthy cells, tissues, and organs. Over time, this can lead to DNA damage, tissue death, and internal scarring. An anti-inflammatory diet involves eating nutrient-rich, whole foods that reduce inflammation in the body. It contains plenty of fibre, antioxidants, and omega-3s. This means a diet rich in vegetables, whole fruit, whole grains, legumes, and fatty fish – that is as unprocessed as possible. Include these anti-inflammatory foods: • Fresh vegetables (all kinds) – Aim for a variety of types and colours (a rainbow of veggies provides phytonutrients) with a minimum of four to five servings per day – especially dark, leafy greens (spinach, kale, Asian greens) broccoli and cauliflower, brussel sprouts, beetroot. • Whole pieces of fruit (not juice that strips them of fibre) – three to four servings per day is a good amount for most people, especially berries and cherries. • Fatty fish – such as salmon, trout, sardines, mackerel & tuna. • Herbs & spices -turmeric, ginger, basil, oregano, thyme, cinnamon etc., • Healthy fats – extra virgin olive oil is the best option, avocado oil and the fats found in seeds, nuts, fish. • Nuts/seeds – such as walnuts, cashews, almonds, pistachios, pine nuts, flaxseeds, chia, hemp. • Whole grains – brown rice, amaranth, buckwheat, and quinoa. • Legumes/beans – especiallyblackbeans, black-eyedpeas, chickpeas, lentils, red kidney. • Drinks – water, green tea and organic coffee in moderation. The Mediterranean Diet is considered one of the healthiest diets and is also a good go-to for an anti-inflammatory diet. It also includes dairy such as yoghurt and cheese, good for calcium intake to prevent osteoporosis. Avoid these inflammatory / processed foods • Processed meats – sausages and cold cut meats – ham, salami, bacon. • Refined sugars – found in soft drinks, cookies, cake, lollies, ice cream, some breakfast cereals. • Trans fats – found in deep fried foods, fast foods, commercially baked goods. Reduce inflammation naturally

Caring for our senior pets

A s with humans, our pets often slow down both physically and mentally as they get older. Caring for an ageing companion requires different considerations when compared with the days when they were once young and active. Gentle, low intensity exercise is important for dogs so that they burn off excess calories and maintain mobility in joints. Dogs enjoy a daily stroll to the park or just down the road and might even enjoy a play at the beach where water will help provide some low impact resistance as they walk but be careful to ensure they do not over do it or they will suffer with arthritic pain later. Don’t stop the exercise altogether as they will still enjoy the time with you and will benefit from the activity, albeit reduced. Obesity is one of themost common problems in senior dogs simply because they begin to

approach. In general, dogs of seven years or older should have their nutritional needs re assessed based on their level of activity and slower metabolism. The diet of larger dogs may even need to be considered at five years, depending on their breed. Senior dogs often benefit from being fed several small meals instead of one large one. Small meals burn more calories in digestion than do infrequent large meals and also help to deliver the energy that they need more evenly throughout the day. They are also far easier for the animal to digest allowing them to retain the nutrients within the food. Dog ramps are a brilliant solution for owners who have difficulty lifting a large dog with arthritis. The ramp allows the dog to walk straight into the back of a car or onto a bed without any pain.
