Bananas Foster Serves 6 INGREDIENTS

½ cup salted butter 1 cup brown sugar ½ cup heavy cream 2 bananas, peeled and cut in half lengthwise A pinch of cinnamon 4 oz Old Sam Dark Rum Good quality vanilla ice cream for serving DIRECTIONS

In a large heavy-bottom skillet, melt the butter over medium heat. Add the brown sugar and stir to combine. Cook for 2-3 minutes, until the sugar dissolves. Add the cream, then stir again to combine. Once the mixture comes to a simmer, place the bananas cut side down in the pan. Carefully pour the rum over everything, then use a long BBQ lighter to ignite the alcohol. Stand back and gently shake the pan until the flames burn out.

Enjoy right away with scoops of vanilla ice cream.

Crema Catalana Makes 6 INGREDIENTS

500 ml whole milk Zest of ½ an orange Zest of ½ a lemon ½ tsp cinnamon 1 vanilla bean pod

7 large egg yolks ½ cup white sugar 2 tsp cornstarch 6 Tbsp Sugar for torching DIRECTIONS

Combine the milk, orange, lemon and cinnamon in a medium saucepan and turn to medium heat. Cut the vanilla bean in half lengthwise and scrape the seeds out, then add the seeds and pod right into the milk mixture. Bring the mixture to a simmer. Meanwhile, whisk together the egg yolks, sugar and cornstarch until pale and fluffy. Once the milk mixture comes to a simmer, slowly pour it into the eggs while whisking quickly. Return the mixture to the saucepan and bring back to a simmer while whisking constantly. Remove from heat and strain through a mesh sieve into a large measuring jug. Divide the mixture between 6 ramekins and set in the fridge to cool for 20 minutes. Wrap with plastic, then cool another hour. Sprinkle about 1 Tbsp of white sugar over each custard in an even layer. Use a butane torch to carefully caramelize the sugar until it is bubbly and a deep amber colour. Let cool for 5 minutes before serving.

Crepes Normandy Serves 6 INGREDIENTS For the Crepes: 1 cup whole milk 1/3 cup All-Purpose flour 3 whole eggs 3 Tbsp melted butter 2 Tbsp white sugar ¼ tsp salt Melted Butter for frying (about 2 Tbsp) DIRECTIONS

Place everything in a blender or food processor and blend until very smooth, scraping down the sides of the bowl a couple of times. Check the consistency of the batter: it should be the texture of whipping cream and should coat the back of a spoon. Add one more Tbsp of flour if your batter is too thin and blend again. Heat a crepe pan or a 12 inch heavy-bottom non-stick pan over medium heat. Brush the pan with butter, then add a scant 1/8 cup of batter and tilt the pan so the batter spreads evenly over the bottom of the pan. Cook for about 30 seconds, until the edges of the crepe begin to dry out and become crisp. Use a rubber spatula to flip the crepe and cook the other side for another 20 seconds or so. Transfer to a warm plate and cook the remaining batter the same way. Caramelized Apple Flambe INGREDIENTS 4 medium granny smith apples, peeled and chopped ¼ cup butter ¼ cup brown sugar ½ tsp cinnamon ¼ tsp ground cardamom ¼ cup Calvados 1 recipe crepes (above) DIRECTIONS Heat a large heavy-bottom frying pan over medium heat. Add the butter to your frying pan, then add the apples and sauté, stirring occasionally, for about 2 minutes or until the apples begin to brown. Sprinkle in the sugar and spices, stir well and cook another 5 minutes, until golden and softened. Add the Calvados Apple Brandy and then carefully ignite, cooking until the flames go out. Keep warm until ready to serve. Fold the crepes into quarters, arrange on a serving platter, then top with apple topping and dust with some icing sugar.

After a long tradition of brewing and drinking in Japan, sake is quickly gaining shelf space in stores across Canada and is also appearing on bottle lists at many restaurants and bars. The growing selection can be thrilling to some, but the sake purchasing experience can just as easily be overwhelming. Here are a few guidelines to help you narrow your search for the perfect sake!

HISTORY Sake has a long history and tradition in Japan- it’s been made and drunk for over 1500 years as part of festivals and religious ceremonies. Temples, landowners and home brewers throughout history have all contributed their knowledge of sake brewing over the years. Sake quality has increased over the years, and with increased global interest, traditional sake is experiencing something of a renaissance. HOWIT’SMADE Sake is an alcoholic beverage made with rice, water, yeast and a special mold called koji - that’s it! This deceptively simple recipe is actually quite finely tuned and is overseen by the Tōji- a master sake brewer. The taste, aroma and quality of sake are dependant on the brewing process as well as subtle differences in the ingredients used. First, a special variety of rice - called sake mai - is polished to remove the bran. There are over 80 varieties of this high-starch and low-protein rice that can be used for sake production. Next, the rice is steeped in water, then steamed carefully. Koji is then added to the cooked rice and left to develop for about a week, after which a yeast is added along with water that is carefully selected for its mineral content. Now, the mash or moromi ferments for 2-3 weeks. Generally speaking, lower grade sakes are fermented quickly at higher temperatures, whereas higher grades are made at lower temperatures over a longer time period. Next, the sake mash is drained, filtered, pasteurized and blended (sometimes) with a little water and then left to age for up to a year, usually in large metal vats, although some aritisinal sakes are aged in wooden barrels. The sake is now ready to drink! Long aging periods are generally not used as most sake is consumed while still “young”. STYLES There are two basic types of sake: Futsū-shu (ordinary sake) which is equivalent to a table wine, and Tokutei meishō-shu, or special designation premium sake.The main difference between the two is how the rice is processed before fermentation.

Premium Sake can be broken-down into two main styles. Some premium sakes are made with added distilled alcohol, whereas, others are made only with rice, water yeast and koji and bear the mention Junmai. One style is not better than the other, but offer different taste profiles. The other key production factor that influences the taste of premium sakes is the percentage of the outer layer of each grain of rice that is milled away. Milling or polishing the outer layers removes proteins and exposes the starch that is found at the core of the grains of rice giving the sake lighter more subtle aromas and flavours . If at least 40% of the exterior is milled away, the sake will be referred to as Ginjo (or Junmai Ginjo if made without the addition of distilled alcohol). If at least 50% is polished away, the sake will bear the mention Daiginjo (or Junmai Daiginjo if made without the addition of distilled alcohol). HOWTODRINK Sake can be served at room temperature, warm, hot or chilled, although top quality sake is not served hot, as the heat causes loss of flavour and aroma. Sake is served out of porcelain flasks known as Wtokkuri and then poured into small ceramic cups called sakazuki or choko. Chilled sake may also be served in wine glasses. PAIRINGWITHFOOD Sake is a great match for many foods. Generally speaking, lighter fish dishes, spicy asian foods, salty cured meats, salads dressed with vinaigrettes and oysters are a great match for the floral, fruit notes of a quality sake.

Ordinary sake accounts for the bulk of sake produced, and is generally affordable, made in large batches and slightly sweeter.

Spaghetti Carbonara Serves 2 INGREDIENTS 1 large egg 2 egg yolks ½ cup grated (packed) Grana Padano cheese 1 Tbsp olive oil ¼ lb thick cut bacon, diced 1/3 box good quality spaghetti DIRECTIONS Place a large pot of lightly salted water over high heat, and bring to a boil. Fill a large bowl with hot water for serving, and set aside. In a mixing bowl, whisk together the egg, yolks and Grana Padano. Season with a pinch of salt and a generous amount of black pepper. Meanwhile, heat the olive oil in a large skillet over medium heat, then add the bacon and sauté until lightly browned but not crispy. Remove pan from heat and set aside. Add pasta to the water and boil until a bit firmer than al dente. Just before pasta is ready, reheat the bacon in the skillet, if needed. Reserve 1/2 cup of pasta water, then drain the pasta and add to the skillet over low heat. Stir for a minute or so. Empty the serving bowl of hot water. Dry it and add the hot pasta mixture. Stir in the egg-cheese mixture, adding some reserved pasta water if needed for creaminess. Serve immediately, dressing it with a bit of additional grated cheese and pepper.

Under Michel Chapoutier’s leadership over the vineyards and wine making facilities, the quality of this cuvée is undeniable. This wine is a blend of Grenache Blanc, Grenache Gris and Macabeu. Pale yellow colour with green hints, this wine exhibits citrus aromas with smoky notes. The palate is round, with a great acidity. A lot of freshness on the finish is mixed with salty notes, which express the minerality of the wine. Would pair beautifully with a roast chicken dinner.

Marlborough is wedged between mountain ranges and the ocean, near the top of the South Island. Wine has only been grown there on any real scale since the 1970s, but in these few decades the region has become recognized internationally as a wine paradise. This aromatic Sauvignon Blanc shows classic Wairau Valley blackcurrant on the nose, backed up with citrus blossom and hints of wild herbs. The palate is fresh, with lively acidity and grapefruit flavours. Tropical fruit flavours finish crisp, refreshing and dry. Enjoy with halibut and greens.

Located in the Padthaway Valley which is comprised of rich Terra Rosa soils. The estate vineyard benefits from excellent sun exposure producing grapes of optimum flavour, colour and tannin development. This wine is a light yellow with a pale straw hue and has a classic nose of lemon, fresh stone fruit and melon. The palate is clean and fresh with mineral characters underpinning ripe pineapple and lime flavours. Think outside the box and pair this wine with some fresh avocado and tuna tapas.

Stoneleigh Vineyards is situated in the heart of the Rapaura area on the northern side of the Wairau valley in Marlborough, New Zealand. Within 2km of the Wairau River and the Richmond Ranges. This Pinot Noir presents smokey and spicy oak with black cherries and boysenberry notes on the nose that lead into plum, dark chocolate and berry fruit on the palate. This wine would be best enjoyed with rich gamey flavours and succulent red meats such as duck confit or wild venison with warm goat’s cheese and roasted hazelnuts.

The history of CVNE begins in the winery located in Haro in the neighbourhood of the railway station “barrio de la estacion “ which dates back to 1879. Close to the railway tracks which, during a time, drove into the cellar to easily transport the wine in oak barrels. This wine has a nose with notes of black fruits and floral aromas that are punctuated by a touch of minerality. It has a long and persistent finish leaving a sweet and fruity aftertaste. Perfect pairing with all kinds of fatty meats and game in the form of roasts and stews.

Château Canet is located in Guillac approximately 30 kilometers east of the city of Bordeaux. The soil of the organic vineyard is composed mostly of clay and limestone. The wine is an approachable and elegant blend of Merlot (80%) and Cabernet Sauvignon (20%) displaying red and black fruit notes with a lifted finish. Perfect for hearty stews, game pâtés and roasted root vegetables.

The Chapoutier family can trace their history in the Rhône region back to 1808, but it was in 1879 that Polydor Chapoutier bought his first vineyards and made his start in the wine making business. A blend of Syrah, Grenache and Carignan, this wine is a deep garnet in colour with aromas of dark fruits and black cherry. On the palate, the wine is fleshy and well-structured with a cornucopia of dark fruit, earthy notes and savoury spices. The wine is a great accompaniment to braised beef dishes and hearty vegetables.
