WHAT YOU NEED • 8 cups watermelon, cubed • 1/2 cup lime juice • 1/2 cup agave syrup • Salt

HOW TO MAKE

1. Wet the rims of 4 glasses with lime juice, then dip in salt. 2. Blend cubed watermelon, puree until smooth. 3. Add lime juice and agave syrup and blend.

4. Pour into 4 glasses, enjoy!

MUSSELS WITH CIDER BUTTER Total time 45 minutes | 8 servings

Heat 1 tbsp butter in a large pot over medium heat. Once melted, add shallots and cook until beginning to soften, 3–4 minutes. Deglaze with 2 cups of cider; bring to a simmer over medium- high. Add mussels, cover with a lidand let steam for 6 – 8 minutes, until all mussels have opened. Remove from heat, discard any mussels that do not open and then stir in tarragon. Meanwhile, in a small saucepan, add remaining cider. Bring to a boil over high heat, and then lower heat to medium, reduce to about half or until it is a syrupy consistency. Whisk in remaining butter until fully incorporated.

• 1 tbsp unsalted butter

• 2 shallots, finely diced

• 3 cups hard cider, divided

• 4 lbs mussels, rinsed and debearded

• 1 tbsp roughly chopped tarragon

• 1 cup unsalted butter, cut into 1/2 inch pieces

PAIR WITH:

Serve mussels with cider butter alongside.
