THE JAPANESE MANDOLIN

PURPOSE OF THE TRAINING EXERCISE: To ensure that staff with responsibilities for using this piece of equipment do this in a safe and hygienic manner. The main risk with using this mandolin is a severe cut to your fingers due to them being too close to the bottom plate and blade. If this happens you fingers will be drawn over the blade as you slide the food item across the blade to be cut. This results in a long deep cut that can remove the skin fully.

Safety Rules

Always follow the following safety rules to ensure safe use of the Mandolin.

Ensure that the work surface that you are working on in flat and clear of all non essential items that may get in the way. Ensure that the tripod is extended on the back of the mandolin and that the blade is facing away from you. Place the guard onto the top of the mandolin and ensure that it slides correctly down the front of the mandolin not getting trapped in the blades.

Both legs must be fully open

Always store the Mandolin without the cutting blades in place, this will prevent injuries when storing and carrying the Mandolin in the kitchen. Use the blade storage box.
