MERRYCHEF OVEN

PURPOSE OF THE TRAINING EXERCISE: To ensure that food handlers know how to clean the Merrychef oven safely

TRAINING AIDS:  Company approved multi-purpose detergent, degreaser, manual pot wash detergent and sanitiser  Clean yellow disposable cloth  Blue Paper Towel  PPE- Gauntlets, mask & goggles

TRAINING METHOD: This is a practical training exercise. The trainer should demonstrate how to clean the Merrychef to the group whilst referring to these training notes.

ASK QUESTION TO GROUP: Why is it important to clean the mealstream every day? CONFIRM CORRECT ANSWER:  If pieces of food debris get stuck on the fan it may cause a fire  To ensure the food is properly cooked  Improve the quality of the food  To ensure the merrychef works effectively  Reduce the risk of fires  It is a legal requirement to keep equipment clean.

Daily cleaning  Remove baking trays and wash through dish washer  Spray equipment with multi-purpose detergent  Scour if required  Wipe clean Weekly cleaning  Wear gauntlets, face mask and goggles  Switch off and isolate power  Switch ventilation on  Protect floor with paper  Remove trays and runners, wash in soapy manual pot wash detergent or through dishwasher  Remove filters to the side of the door and wash through soapy water  Spray inside with degreaser – leave for 20 minutes before scouring  Scour where required to remove heavy build up of grease and carbon  Wipe down with clean water  Mop up any spillages and place A board over

Trainer to demonstrate the cleaning of the Microwave Ensure that every team member has listened to the above points and completely understand what is expected of them.
