PM Projects XO Cognac 750ml / 94PF a ten-year project between Palazzi and Jean-Noel Pelletan, one of a small number of master coopers in France, known for his encyclopedic knowledge of all things Cognac and casks as well as his huge collection of pre-20th century books detailing techniques THROUGH THE GRAPEVINE FRANCE, COGNAC The range Through The Grapevine was created to unearth these raw jewels and reveal their full potential. A selection of casks and small batches of exclusive Cognacs, directly selected alongside passionate producers, having their own know-how, sign of quality and unique products. ROTATING LIMITED PRODUCTS AVAILABLE Through the Grapevine Pasquet SC 1995 750ml / 100.6PF Jean-Luc Pasquet Cognac is an independent grower and distiller. Their Grande Champagne vineyards have been in the family since 1730. In the early 1990s, the Pasquet family wanted to return to more natural agricultural methods, so they have been farming their vines organically, using native yeast to ferment the wines and distilling on the lees in their own small pot still. Through the Grapevine Francois Voyer, Lot 93 750ml / 106.6PF Distilled from ugni blanc grapes on the lees, this cognac expresses its richness and strong personality through notes of almond cake, rich, rancio, and wood. Through the Grapevine Francois Voyer 750ml / 91.8PF In the fine terroir of Grand Champagne Cru & the Premier Cru of Cognac, the Voyer family has harvested grapes, distilled wine and aged the resulting eaux de vie in oak barrels for 5 generations .

The Landier family produces cognacs from Ugni Blanc grapes in the clay- limestone terroir of Terre de Groie. Distillation on lees is used to preserve the maximum amount of aromas and body. After 45 years ageing this Fins Bois expresses all its astonishing depth with

notes of deep fruit, spicy nutmeg, licorice, and vanilla. Through the Grapevine Vallein Tercinier 750ml / 116PF

This single cask 1988 from Fins Bois is specially selected by La Maison du Whisky. Bottled at cask strength to reveal all its complexity, this cognac is also un-chill filtered to keep the delicacy of its fruity aromas. Made from Ugni Blanc, notes include honey, vanilla, Sichuan pepper, and apricot. Through the Grapevine Trijol SC 2003 750ml / 86PF The first Family Trijol still was installed in Saint-Martial-sur-Ne in the Cognac heartland in 1859. Today, the house boasts twenty two 2,500-liter stills. Mixime Trijol cultivates its own vines, as well as distilling and ageing Cognac. In this way, Mixime Trijol oversees all the steps in the cognac production process. This philosophy of a continuous quest for excellence has been handed down from generation-to-generation.

COGNAC SIDECAR

INGREDIENTS: 1.5 oz. Frapin 1270 , or the PM Projects XO Cognac

(pick one depending on placement) .5 oz. Greenbar Orange Liqueur .75 oz. Fresh Lemon Juice .25 oz. Simple Syrup Lemon Twist (to Garnish)

used to produce and improve Cognac. PM Projects Hommage Cognac 750ml / 87.6PF

DIRECTIONS: Add all ingredients, save for the garnish, to a shaker tin with ice. Shake until chilled and fine strain into a chilled coupe or martini glass. Garnish with a lemon twist.

Comprised of eaux de vie from one single cask plus a few assorted demijohns acquired by PM Spirits owner Nicolas Palazzi, this is a blend of Cognacs distilled between 1925 and 1965. Bottled in July 2020, only 870 Bottles produced. LIMITED AVAILABILITY
