Don Amado Mezcal Pechuga *Vegan* 92PF / 375ML / 750ML
Don Amado Pechuga is not a traditional Pechuga as no meat is used in the production. Instead, this vegan Pechuga is made with a variety of fruit and spices. An autumn ‘harvest bounty’ mezcal, Don Amado Pechuga is a third distillation of our Don Amado Rústico, made with the addition of seasonal fruits, nuts and spices including apricots, wild criollo apples, hard, stubby bananas with clove, cinnamon, raisins, almonds, and walnuts. A treasure of complexity that exhibits rich, bright fruit notes, roasted nuts, dark baking spice, wafting hints of clean smoke, fresh cinnamon, and stone fruits. Don Amado Mezcal Tepeztate 92PF / 375ML / 750ML On the nose, there is candied lime, soft white flowers, with more vegetal notes of bell pepper and cucumber skin along with hints of nuts, soft pastry, and a very lightly charred wood, supported by a back note of minerality. The flavors continue in the same vein, tasting of grilled lemon & lime, sun-baked white flowers, bell peppers, persimmon, squash blossoms, charred oak, and minerals. These flavors are intricately balanced and deliciously perplexing, hinting at matcha tea and persist in a delicate fade that savors grilled fruit nuances. Don Amado Mezcal Rustico 94PF / 375ML / 750ML Mineral clay influence is quite prevalent with aromatics of ash, crushed walnuts, roasted corn, and spices. Citrusy Espadin agave palate is well balanced against notes of caramel, butterscotch and herbs. Don Amado Mezcal Reposado 90PF / 375ML / 750ML Familiar Mexican aromas and tastes: roasted buttered corn, hints of cinnamon, tropical fruit, and dried chilies with a moderate amount of smoke. Barrel-aging contributes spicier, more vanilla-driven notes. Don Amado Mezcal Añejo 87PF / 375ML / 750ML A regal take on what many consider a rustic product. Savory, mesquite aromas hint at a backyard BBQ and cayenne pepper. These flavors flow between layers of baked stone fruit from the brandy barrels. And it leaves your mouth feeling like the antitheses of those toothpaste ads – sparkling, fresh, full of flavor! Don Amado Mezcal Arroqueno 92PF / 375ML / 750ML Rustic, refined, revealing floral aromatics with caramelized agave, leather and soft smoke notes lending structure to cooked yam flavors. Mouthfeel delivers quince, persimmon, lemon verbena and kaffir, with layers of

AGAVE MEZCAL DON MATEO DE LA SIERRA MEXICO, MICHOACAN In 1840, the Vieyra family began their journey as maestro mezcaleros, and in 6 generations, mezcal in Michoacan is what they are known for. The brand is not named after the first maestro, but the 3rd, Emilio’s great, great grandfather Mateo Rangel. The Vieyra family chose Don Mateo because he had fought and died for social causes during the Mexican Prohibition. In remembrance of him, the Vieyra family continues to fight for these causes and change the industry the only way they can, through their actions. The Vieyra family uses sustainable field practices, like using cows and chickens as herbicides and pesticides and leaving the land as untouched as possible. Trees from their property are never cut or moved and the agave are spaciously planted to avoid soil erosion in efforts to maintain a natural balance to the fields. The terroir of Michoacan is characterized by its rivers; the Trans-Mexican Volcanic Belt with many active, dormant and extinct volcanoes; and the variety of forests from conifer to tropical. The Vieyra Vinata is nestled on the side of a hill in the steep highlands above Morelia in the Rio Balsas region surrounded by temperate evergreen forest. Don Mateo Cupreata 92PF / 750ML Don Mateo Cupreata is made with semi-wild agave Cupreata. Agave Cupreata was nearly gone from Michoacán until the Vieyra family revived the subspecies in their own back yard. It can only reproduce sexually and is a pillar of agave biodiversity. The terroir of Michoacán is characterized by its rivers; the Trans-Mexican Volcanic Belt with many active, dormant and extinct volcanoes; and the variety of forests from conifer to tropical. Once mature, the agave Cupreata are roasted in a pit oven, fermented using naturally occurring yeasts in oak wood tanks, and double distilled in a Filipino style still. The distillation in local pine wood rounds off the smokiness from the earthen pit; a mezcal to be appreciated by aficionados and newcomers alike. Don Mateo de la Sierra Mezcal Alto 92PF / 750ML
The name of this semi-wild agave is Inaequidens, but locally they call it Alto – because it only grows at very high elevations. The plant can take about 12-15 years to mature. Don Mateo de la Sierra Mezcal Pechuga 90PF / 750ML This recipe is extremely rare, being a Pechuga based on Cenizo instead of Espadin. The recipe comes from Don Emilio’s wife, Dona Maria. She mixes a proprietary blend of fruits and spices, and the animals used are iguana, turkey and venison. Don Mateo de la Sierra Mezcal Silvestre 100PF / 750ML Don Mateo Silvestre is a unique expression based solely on the agave. This mezcal is produced using only wild agave Cupreata plants on the mountainsides of El Limon, where they thrive with the help of cows and chickens, herbicide and pesticide free. El Buho Mezcal Cuishe 96PF / 750ML
EL BUHO MEZCAL MEXICO, SANTIAGO MATATLAN The El Buho Mezcal brand, founded in 2010 by Brooklyn-based chef TJ Steele, has been exclusively produced by the Jimenez Mendez family, 5th generation mezcaleros, in Santiago Matatlan, Oaxaca, Mexico. El Buho Mezcal Agave Mexicano 94PF / 750ML We find this first release of Mexicano, from Agave Rhodacantha, to be a delicate, balanced mezcal that is best sipped. Although this agave carries many names throughout Oaxaca, the mezcales made from this species have a signature flavor across regions that often have beautiful vanilla, floral and chocolate notes with a thick texture. El Buho Mezcal Añejo 94PF / 750ML
Cuishe agave matures for about 12 years, then the agaves are cooked for 4 days with the trunk of the plant, fermented for 6 days and twice distilled in copper stills. El Buho Mezcal Espadin 90PF / 750ML / 1.0L 100% Espadin agave harvested at maturity from sustainable and bat-friendly fields. The hand-cut agaves are slowly roasted in a stone pit fire fueled by local oak. The mash is crushed by a horse-powered tahona stone mill and fermented for 3-5 days. The Jabali agave is notorious for being the most difficult agave to work with due to the foam it produces and the lower sugar content. This agave is named after the wild boar because of its spiky, curved leaf resemblance to the animal. El Buho Mezcal Tepextate 96PF / 750ML
The Arroqueno agave takes about 15 to 20 years to mature. One of the singularities of these plants is their size, with harvested pinas weighing up to 300kgs. This makes them one of the largest plants mezcal is made from. With a smooth start of bold roasted agave flavor, this velvety mezcal has an incredible texture of light fruit notes and a long-lasting finish. At 106 proof, this mezcal expression’s heat is elegant and balanced.
This Tepextate comes from multiple batches of the rare agave, which grow wild off the mountainsides. The plant ages 25 30 years before harvesting and requires a 3rd distillation due to its low sugar content Bold and complex, the tepextate’s heavier body relays its intense flavors.
Regions / Map Varietals
2 . They’re distilled differently. Both tequila and mezcal are made from the harvested core of the agave plant, otherwise known as the “piña.” However, that’s where the similarities in production end. Tequila is typically produced by steaming the agave inside industrial ovens before being distilled two or three times in copper pots. Mezcal, on the other hand, is cooked inside earthen pits that are lined with lava rocks and filled with wood and charcoal before being distilled in clay pots. While some large-scale mezcal producers have adopted modern methods, artisanal mezcal makers continue to use this more traditional method, which is the source of the smokiness commonly associated with mezcal. — Food & Wine
TEQUILA: must be made in one of the 5 certified states in Mexico (refer to the orange section on the map) MEZCAL: can be made in one of 8 approved states in Mexico, but is most broadly produced in Oaxaca state. WHY ARE THEY DIFFERENT?: 1 . They’re made with different kinds of agave. Mezcal can be made from more than 30 varieties of agave. According to spirits writer Chris Tunstall, the most common varieties of agave used for mezcal are tobalá, tobaziche, tepeztate, arroqueño and espadín, which is the most common agave and accounts for up to 90% of mezcal.

OAXACAN NEGRONI INGREDIENTS 1oz Espina Negra Mezcal (Espadín suggested) 1oz Nardini Bitters 1oz Sweet Vermouth (such as Cocchi di Torino) Garnish: Orange twist or peel DIRECTIONS Combine Espina Negra, Nardini Bitters, and sweet vermouth into a mixing glass with ice. IONICO MEXICO, OAXACA The Spanish term, Iónico, refers to an atom or molecule having an electric charge and is, by definition, never neutral. It is precisely this electric charge that facilitates the chemical reactions that make up the fermentation process. LA ESCONDIDA MEXICO, OAXACA Mezcal production in Mexico was banned by the Spanish crown for almost 100 years in the early 18th century. However, local producers resisted and continued to produce Mezcal in the beautiful mountains of Oaxaca. Among them were some brave women who risked their lives selling their Mezcal illegally from town to town. The brand La Escondida, meaning “the hidden lady”, was inspired by a local legend and honors those women who kept the tradition alive. Grand Mezcal uses 100% agave espadin (Agave Angustifolia Haw by its scientific name), one of the most prized agave varieties grown in the heartland of Oaxaca, to make La Escondida. La Escondida Mezcal Blanco 80PF / 700ML Traditional methods produce earthy, smoky notes on the nose, while its smooth and balanced flavor, robustly absorbed from cooked agave, provides a long finish which is both strong and pleasant. La Escondida Mezcal Reposado 80PF / 700ML Made from the Espadin agave from Oaxaca and rested in French oak barrels for 9 months. Earthy and smoky notes with hints of spice, vanilla, and chocolate. LAS MARIAS MEXICO, SAN LUIS POTOSI Las Marias Mezcal is a premium spirit crafted with great care and attention to detail for over 76 years. Made using the traditional cooking method and distilling agave, this mezcal has a rich and complex flavor profile that will delight any connoisseur. Las Marias Mezcal Salmiana 90PF / 750ML Salmiana Agave, a varietal native to the San Luis Potosi region of Mexico, gives this mezcal a distinctive character that sets it apart from other spirits. The agave is harvested by hand and roasted in underground pits, imparting a smoky flavor and aroma to the finished product. This mezcal is best enjoyed neat or on the rocks, allowing the full range of flavors to be appreciated. Created from 100% rare Tepeztate and Arroqueño maguey, each bottle tells a story of patience, skill, and deep respect for the land. Los Perdidos Arroqueño Reposado 99.6PF / 750ML A Symphony of Tradition and Terroir. 100% rare Arroqueño agave. The journey begins with the agave hearts, slowly roasted in earthen pits, infusing the spirit with a subtle, smoky depth that whispers of ancient techniques. The fermented agave is then meticulously distilled using traditional ceramic and bamboo pot stills, preserving its purest essence. But the magic doesn’t stop there. The spirit is aged for five months in French Armagnac casks, adding layers of sophistication. Bottled undiluted at full cask strength. MESTIZO MEXICO, OAXACA Mestizo Mezcal is an ancient spirit that is unique because of its distinctive, complex and aromatic flavors. Mezcal was produced centuries ago by the Zapotec tribe in Mexico and was a gift from the goddess Mayahuel. In the 16th century, the Spanish introduced a specialized distillation process to the Zapotec tribe that was used to improve the ancient beverage. Today, the founders of Mestizo Mezcal work with its producers from the Mexican state of Oaxaca to further define and enrich the taste of their product and create a perfect convergence of cultures within each bottle. Nacional Mezcal 1931 102PF / 750ML Mezcal Nacional 1931 is produced from wild agave tobalá, among the most prized of the agaves. Agave tobalá yields Mezcal Nacional 1931, a complex and elegant mezcal, and a worthy tribute to Oaxaca and its people. In 1931, Oaxaca was shaken by a devastating earthquake. Although much of Oaxaca was destroyed, its people were never defeated. Mezcal Nacional 1931 was created as a tribute to the great people of Oaxaca who lost much in 1931, but who never lost the courage, hope, and Mezcal Nacional 1938 is an ensamble produced from wild agave cirial and cultivated agave espadín. Ensambles require extra care as they are produced by combining an optimum ratio of cirial and espadín piñas prior to cooking, crushing, fermentation, and distillation. The maestro meszcalero must carefully pre-determine the optimum ratio of agave varieties to yield the best possible ensamble, a closely guarded secret. This process produces an approachable, well-balanced, and truly flavorful mezcal that is sure to satisfy even the most discerning of palates. Nacional Mezcal 1943 91.6PF / 750ML Mezcal Nacional 1943 is produced from wild and cultivated agave cupreata, among the most prized of the agaves. Agave cupreata, in the right hands can yield a delicate and flavorful mezcal, a worthy tribute to Michoacán and its people. In 1943, Michoacán was witness to the incredible power of volcanoes. That year, the Parícutin volcano surged suddenly from a cornfield. In the end, two towns were completely buried by lava, leaving only the church towers rising dramatically above the hardened lava. Mezcal Nacional 1943 is produced from wild and cultivated agave cupreata, among the most prized of the agaves. Agave cupreata, in the right hands can yield a delicate and flavorful mezcal, a worthy tribute to Michoacán and its people. ULTRAMUNDO MEXICO, DURANGO Ultramundo Mezcal is an agroforestry project.They’re attempting to foster a balanced relationship with nature through craft spirits, specifically artisanal mezcal, using the agaves from their 24,000 acre ranch in Mapimí, Durango. PALOMO MEXICO, SANTIAGO MATATLAN, NOM-O20X Del Buen Agave is a collective of producers in the “Mezcal Capital of the World,” Santiago Matatlán, Oaxaca. They have worked together since 1930 and became an official Cooperative Society in 2006. Mezcal Palomo was launched by them in 2013. Palomo Espadin Mezcal 92PF / 375ML / 700ML / 1.0L Made with 12-year-old maguey Cirial (agave Karwinskii), then traditionally cooked in an underground pit oven, milled by horse-drawn tahona, and double distilled in a copper still. This mezcal has unique citrus aromas and flavors that are slightly smoked with a bit of agave sweetness. Palomo Te Conquista Cacao 92PF / 700ML Made from ripe regional espadin agaves, baked underground in a conical stone oven for five days, then milled by horse drawn tahona. The mosto is fermented with natural yeast in wooden tinas. The Mezcal is double distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. Then a 4-week maceration is done with homemade Oaxacan chocolate. Followed by a 3rd distillation to produce a clear spirit with chocolate flavors. Palomo Te Conquista Coffee 92PF / 700ML Made from ripe regional, espadin, agave, baked underground in a conical stone oven for five days, then milled by horse-drawn tahona. The mosto is fermented with natural yeast in wooden tinas. The Mezcal is double distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. A third distillation after a 4-week maceration with roasted Oaxacan coffee beans. Palomo Te Conquista Mole 92PF / 700ML Made from ripe regional agaves, baked underground in a conical stone oven for five days, and milled by horse-drawn tahona. It is fermented with natural yeast in wooden tinas. The Mezcal is double distilled to obtain a Joven Mezcal with sweet, caramel, earthy, floral, and smokey flavors. For the third distillation, a 4-week maceration is done with all 30 ingredients of Carlos’ grandmother’s mole recipe, imparting notes of the chiles, peanuts, spices and an herbal aftertaste.

It’s crafted with traditional methods, using artesian well water from deep underground and ripe blue Weber agaves that grow in volcanic soil. After the agave hearts are cooked and crushed, they are left to ferment naturally. Then, the juice is distilled using alembic stills. Cazcanes No. 7 Blanco Organic 80PF / 750ML Cazcanes Tequila Blanco No.7 is an 80-proof version of our award-winning tequila produced using lowland agave (Valle agave). FUENTESECA MEXICO, JALISCO, NOM 1146 LIMITED BATCH RELEASE Fuenteseca Cosecha Tequila Blanco 89.6PF / 750ML This Cosecha bottling is made from over-ripe Highland pinto Blue Weber agave grown at 5,019’ elevation in the rugged, extremely mineral-laden CALICHE soil of Vista Hermosa, Michoacán, the southernmost region within the D.O. This area’s calcium carbonate-suffused, mineral-rich terroir is evident in Tequila Fuenteseca Cosecha 2018’s fantastically- heightened minerality that beautifully accents the pure agave flavors of sweet, cooked yams and warm baking spices. Fuenteseca Reserva Añejo 5YO 82.6PF / 750ML Fuenteseca Reserva Extra Añejo Tequila 2015 Harvest (Cosecha 2015) is an exceptional and rare tequila that has been aged for five years, resulting in a smooth, complex, and rich flavor profile. This tequila is made from 100% Blue Weber Agave, grown in the highlands of Jalisco, Mexico, and harvested in 2015. Fuenteseca Reserva Añejo 9YO 84.6PF / 750ML Master Distiller Enrique Fonseca is a pioneer in extra-añejo tequila, experimenting with varied altitudes and barrel types—including French oak, bourbon, and wine casks. The Fuenteseca line ages from 7 to 21 years; when combined with the agave’s decade-long growth, some expressions represent nearly 30 years of production. Fuenteseca Reserva Añejo 7YO 84PF / 750ML Enrique Fonseca distilled this expression in early Spring of 2010, with three quarters of the bottling made in a double-copper column-still with removed plates to achieve a lower distillation proof, and the remaining quarter made in an alembic pot still. Half of the run was then stored in American white oak previously used to age California red wine, and the remaining half barreled. Fuenteseca Reserva Añejo 15YO 87PF / 750ML The highland agave used in this lot were harvested in Atotonilco in the Spring of 1998. Distilled in 1995 using a blend of copper column (75%) and alembic (25%) stills, this expression began with six years of high-altitude aging in white oak rye casks. The tequila was then split between rye and red wine barrels for an additional 12 years of aging in a cool, coastal climate. Fuenteseca Reserva Añejo 21YO 88.6PF / 750ML This lot was distilled in copper double-column stills from mostly 1984 plantings harvested in late 1993 and laid into barrel in early 1994. The casks were stored for 10 years in a dry, earthen-floor room in Atotonilco el Alto, before being moved to a higher, cooler climate on the slope above the highland town, where they remained for 11 more years. Nearly all the barrels were previously used for aging California white wine, with one barrel having been used for aging Canadian rye whiskey.
