Monte-Carlo Société des Bains de Mer celebrates its recognition as the world’s most starred resort after earning two stars for Abysse Monte-Carlo at the Hôtel Hermitage Monte-Carlo, and one star for Elsa at Monte-Carlo Beach at the 2025 Michelin Guide France Ceremony. Abysse Monte-Carlo or the Art of Sushi on Mediterranean Shores Abysse Monte-Carlo stands out as one of the rare restaurants that was awarded two Michelin stars shortly after opening, making it the first Japanese restaurant in Monaco to receive such a prestigious accolade from the Red Guide. This remarkable achievement establishes a high benchmark for both professional accolades and customer expectations. However, this exceptional standard is primarily upheld by Chef Yannick Alléno and sushi master Yasunari Okazaki, who carefully source their fish from local catches and take reproduction cycles into account to protect the marine ecosystem. Each bite invites curiosity amongst the taste buds, captivating even aficionados of Japanese cuisine. Elsa made of sea salt and sunshine In a different realm of culinary excellence, Elsa restaurant presents itself as “a marine garden” along the Mediterranean coast. A year after taking over the kitchen, Chef Marcel Ravin restores the restaurant’s star rating and gives Monte-Carlo Beach back its gastronomic reputation. Alongside Chef Domenico d’Antonio, he crafts a menu that highlights the ocean’s flavours using fresh ingredients from the French Riviera. In addition to cooking with seawater steam and marine-vegetable jus, Marcel Ravin explores unique flavour combinations. For a starter, consider the monkfish paired with duck foie gras, Nori seaweed, pig’s trotters, and summer fruits; for the main course, indulge in flame-seared Mediterranean amberjack served with a savoury earth-and-sea condiment featuring summer truffle and light shellfish raviolis, concluding with a dessert of orchard fruits, sea fennel, and courgette ice cream infused with jasmine. ■
