Buttered Rum & Sea Salt Caramel
6 tbsp
unsalted butter
1/3 cup
dark brown sugar
3 tbsp
light corn syrup
1/4 tsp
salt
1 tsp
vanilla extract
4 Tbsp
Old Sam Dark Rum
1.) Preheat oven to 300F. Spray a large baking sheet with
cooking spray or line it with parchment. Have a rubber spatula
handy. Place the popcorn in a large bowl.
2.) Heat the butter, sugar, corn syrup, and salt in a medium
sauce pan over medium-high heat, stirring frequently.
3.) Once the mixture comes to a boil, cook another 5 minutes.
Remove from heat and add the rum and vanilla. Stir and
immediately pour over the popcorn.
4.) Use a rubber spatula to stir until the popcorn is nicely
coated and then transfer to the baking sheet, spreading out
to an even layer.
5.) Bake for 35 minutes, stirring once halfway through. Let cool
for about 15 minutes before eating.
