RHINE WINE AND SELTERS.

(Use a large wine glass.)

The bartender's attention is called to the fact that

when a customer calls for Rhine wine and selters

water, he desires a larger portion of wine than of

selters, and, if he should call for selters and wine, he

desires more selters than wine; it is understood, in

serving wine and selters, the imported selters must

be used, the artificial selters will spoil the wine and

destroy its flavor; attention must be paid that both

the wine and the selters are continually kept on ice.

This is a favorite drink with German people and

preferred by them in many cases to lemonade.

IMPERIAL BRANDY PUNCH.

(For a party of twenty.)

4 quarts of German imported selters water;

3 quarts of brandy (Martell);

1 pint of Jamaica rum;

IJ pound of white sugar;

Juice of 6 lemons;

3 oranges sliced;

1 pinapple, pared and cut up;

1 gill of curagoa;

2 gills of raspberry syrup;

Ice and berries in season;

Mix well together in a large bowl, and you will have

a splendid punch.

If not sweet enough, add more sugar.

BRANDY AND SODA.

(Use a large bar glass.)

3 or 4 lumps of broken ice;

1 wine glass of brandy (Martell);

1 bottle of plain soda-water;
