FOR
MAKING
BRANDY
SHRUB.
This
is
done
in
the
following
way
:
—
Take
from
75
to
80
gallons
of
brandy,
8
or
10
gallons
of
lemon-juice,
8
gallons
of
orange-juice,
4
pounds
of
thin
rind
of
fresh
lemon-peel,
and
2
pounds
of
orange-peel,
fresh,
(both
pared
as
thin
as
may
be,)
and
add
them
to
the
brandy
the
first
thing;
with
4
ounces
of
terra-japoniea,
1
hundred-
weight
of
loaf-sugar
or
clayed
sugar,
dissolved
in
part
of
the
water
used
for
making
up,
added
with
the
above
in-
gredients
to
the
brandy,
&c.
Fill
up
with
good
clear
water,
set
the
cask
on
end,
with
a
cock
near
the
bottom,
and
let
it
stand
till
fine.
Shrub
may
be
made
in
a
similar
manner
with
whisky,
apple
brandy,
peach
brandy,
&c.,
with
similar
ingredients
in
the
before-mentioned
proportions.
The
quantity
can
be
increased
or
reduced
to
suit
the
operator,
by
duly
pro-
portioning
the
ingredients
to
the
quantity
of
spirits
em-
ployed.
ELDER
JUICE.
To
make
this
article,
you
must
let
your
berries
be
fully
ripe,
and
all
the
stalks
(which
are
numerous)
be
clean
picked
from
them.
Then,
if
you
have
a
press
for
drawing
all
the
juice
from
them,
have
ready
four
hair-
cloths
somewhat
broader
than
the
press,
and
put
