Avocado Eggnog

(Serves 2 to 4)

3 eggs, separated

1/2 tsp. salt

1 Tbsp. honey

2 cup milk

1 Tbsp. grated orange peel

1/2 cup avocado, peeled, seeded, and mashed

Directions:

1. Beat egg yolks with milk and avocado. Add

honey, orange rind, and salt. Blend well.

2. Beat egg whites until stiff, and fold into milk

mixture. Dust with nutmeg.

Rice and Beans

(Serves 4)

1 cup red kidney beans

1 cup canned coconut milk

1 clove garlic (optional)

2 cup cooked rice

1 onion, sliced

salt and pepper to taste

Directions:

1. Combine all ingredients into a large pot.

2. Heat slowly until the liquid is absorbed (try not

to boil the coconut milk).

3. Fluff rice gently with a fork.

Honey Candy

(Serves 8 to 10)

1 lb. honey

1/2 lb. sugar

2 oz. butter

Directions:

1. Boil ingredients until a glob hardens when

dropped in cold water.

2. Turn out boiled ingredients into shallow plates.

Be careful, as this will be hot.

3. When cool enough to handle, twist or work into

desired shapes.
