Soyer.

Put

one

quart

of

syrup

of

orgeat,

one

pint

of

cognac

brandy,

half-pint

of

maraschino,

quarter-pint

of

sunshine

rum,

three

bottles

of

champagne, two

bottles

soda

water,

three

ounces

sugar,

the

juice

of

four

lemons.

Stir

well

till

the

sugar

is

dissolved,

and

whip

the

mixture

up

with

an

egg-whisk

to

whiten

the

composition.

Put

the

champagne

in

last,

and

stir

well.

Hebe's

Cup.

Cut

an

inch

and

a

half

off

of

a

freshly

cut

cucumber

into

very

thin

slices

and

put

them

in

a

china

bowl

with

the

thin

rind

of a

lemon

and

three

tablespoonfuls

of

castor

sugar.

Mix

all

well

to-'

gether,

then

pour

on

three

tablespoonfuls of

brandy,

six

of

sherry,

a

bottle

of

soda

water,

and

a

bottle

of

claret

;

let

them

remain

for

an

hour,

and

add

another

bottle

of

soda water

just

before

serving.

Cup.

Mix

together

one

bottle

of

Hockheimer

and

one

bottle

of

soda

water

and

add

one

tablespoon-

ful

of

castor

sugar,

three

large

slices

of

pine-apple,

and

four

pounds

of

chipped

ice.

Ice

Cream

Soda

Water.

Take

equal

quantities

of

fruit

syrup

and

cream,

with

double

the

quantity

of

chipped

ice,

add

a

bottle

of

soda

water,

and

drink

whilst

effervescing.
