Zante
Syrup.
Take
four
pounds
of
currants,
wash
and
pick
them
free
from
stalks
and
pips,
pound
them
in
a
mortar,
and
add
gradually
one
gallon
of
water.
Boil
on
the
fire
for
twenty
minutes,
then
stram,
and
to
every
pint
of
juice
add
three-quarters
of
a
pound
of
sugar
;
bring
to
the
boil,
and
when
cold
bottle.
Black
currant
syrup
is
treated
in
the
same
way.
