Grilled Fish
Olive oil
2 large garlic cloves
1 1/2 tbsp fresh lime juice
1 tbsp ginger
1 chili, seeded and thinly sliced
Four 6-oz. fish fillets
Salt and pepper
Directions:
1. Combine olive oil with garlic, lime juice, ginger,
and chili.
2. Place fish fillets in the mixture. Coat fillets well
with mixture. Cover and refrigerate for 1 hour.
3. Remove the fillets from the marinade. Remove
the excess garlic and ginger.
4. Season the fish with salt and pepper and cook
over grill.
Johnny Cakes
1 cup flour
1/2 cup cornmeal
1 egg, beaten
5 tsp baking powder
1/3 cup sugar
2 tbsp vegetable oil
1 cup milk
1 tsp nutmeg
Salt and pepper to taste
Directions:
1. Preheat oven to 350ºF.
2. Mix all dry ingredients together.
3. Mix egg, milk, and oil into dry mixture and
blend well.
4. Pour into 8-inch square pan and bake 30–35
minutes.
