acter and flavor exported from Bordeaux,and some of
which are of quality superior to the original Sauterne
wines. Chateau Yquem, Chateau Suduirant, etc., are
considered Sauternes. -A.11 these wines so called are
sweet but lose their excess of sweetness with age. The
Sauterne grapes, which are of medium size and white,
are gathered almostone by one,astheybecome extremely
ripe and mellow. Fermentation really commences be
fore they leave the vine. They are out oft with scissors
by women just in time to prevent rotting, this neces
sarily slow process causing the vintage to extend over
many weeks. The first result of fermentation is a very
sweet, luscious wine known as tele, which is mostly
sent to Russia, where it commands fabulous prices.
The second wine, called Tnillicu, is of a drier character,
being made from the less saccharine grapes,and is the
class generally meantwhen speaking of Sauterne. The
third wine is made by mixing all the remaining grapes,
the result being designated as the queue. The luscious,
delicate Sauternes leave no disagreeable farewell after
indulging, but are rather marked by a distinctive seve
or special taste which, while it remains in the mouth,
leaves the palate perfectly fresh. The finer growths of
these vines, like the red wines of Medoc, are arranged
in classes; thus,grand first growths, Chateau,Yquem,
